Cauliflower Pista Soup

Ingredients

    

 METHOD

In a pan, heat 2 tbsp of butter.
Add the finely chopped onions followed by finely chopped garlic.
After the onions become translucent, add the cauliflower florets.(The cauliflower florets should be pre-washed in hot salt water).
Add  salt and toss the cauliflower.
Add 1 tbsp of maida and mix it for a minute.
Add a cup of water and a cup of milk. Cook till the cauliflower become soft and mushy.
Let the mix cool. Grind the mix with pista to form a thick paste.
Heat a pan and transfer the paste into it. Add some water in the mixer jar to remove the paste stuck in it and to thin the paste in the pan.
Add some freshly ground pepper and check salt. Turn off the heat and serve.
Garnish with pista nuts or grated cheese.
