Moong sprouts-onion pakora

INGREDIENTS
moong sprouts  1/2 cup
onion 1 big finely chopped
green chilies finely chopped to taste OR can use chili pdr. to taste
turmeric pdr. 1/4 tsp
hing little
ajwain / carom seeds 1 tsp
besan 1/2-3/4 cup
rice flour 1/2 cup
salt to taste
curry leaves finely chopped 2 tsp
oil for frying
water to make batter

METHOD
mix together sprouts, onion, curry leaves, hing, green chilies, turmeric pdr., ajwain well.
add besan and rice flour, mix well along with salt
add water little by little to make thick batter as for pakoras
heat oil, make small pakoras, deep fry in medium hot oil till brown 
drain in kitchen towel, serve hot with chutney/ ketchup

NOTE
this is healthy, as sprouts are rich in vitamin b complex, curry leaves as Vitamin E, green chilies are rich in Vitamin C, besan and sprouts gives protein, carbs from rice flour. Ajwain and hing helps in digestion.
I made this, as I had some sprouts, with which I made cutlets, then used the remaining to make pakoras for tea time !

Velvet stuffed cutlets

INGREDIENTS
for the outer covering
beetroot grated 1 cup
carrot grated 1 cup
potatoes 2-3 big boiled, peeled and mashed about 1/2- 3/4 cup
coriander leaves finely chopped 2 tbsp
chana masala 1/2 tsp
breadcrumbs 2-3 tbsp
salt to taste
ginger-green chili paste 1 tbsp or to taste

for stuffing
paneer grated 2-3 tbsp
cheese grated 2-3 tbsp 
green chilies 1 tsp finely chopped or to taste
salt little as cheese as salt
coriander leaves finely chopped 1 tbsp
garam masala 1/4 tsp

for frying
cornflour slurry as needed
breadcrumbs to coat as needed
oil for frying

METHOD
mix all the ingredients for stuffing, make small oval shaped balls and keep aside
outer covering, mix all the ingredients well, adding breadcrumbs as needed to get the correct consistency to make cutlets
Take a lemon sized ball of outer covering, flatten it, put the stuffing, cover well, roll into oval shape, dip in cornflour slurry, to coat well, then roll in breadcrumbs, deep fry in medium hot oil till brown, drain, serve hot with any dip or chutney of your choice.

NOTE- if you don't want to deep fry, then you can shape flat rounds and shallow fry to make it healthier. This is a very healthy cutlets, giving us protein, vitamins, fibre, carbs too.

Carrot-Sago( sabudana) pudding

INGREDIENTS
carrot grated 1/2-3/4 cup
sago( sabudana) 2 tbsp
oats 4 tbsp
gur/molasses 3/4 cup
ghee 3-4 tbsp
sugar 2 tbsp
cornflour 3 tsp
water as needed

METHOD
as usual, I minced carrot in the mixie, byt shopping them small
roasted sago over low flame till light brown
removed sago and off the flame added oats, to get warm in the same pan
Once oats and sago got cooled, I powdered them along with minced carrot in the mixie
in a heavy pan ( you may use non-stick) I added 1 tbsp ghee, add the powdered ingredients, kept cooking them on low flame till I found the moisture from carrot had gone, roughly 7 minutes, stirring often
I added water about 1 cup, to cook the ingredients, cooked for 3-4 minutes on low flame stirring often
Then I added the gur, another 1/2 cup of water, mixed well and cooked till the gur had melted, then when I tasted it, felt it wasn't very sweet, so added about 2 tbsp sugar, you may use normal or brown sugar. 
I mixed cornflour with 1/4 cup of water, added the cornflour mixture , added another 1/4 cup of water to cook the mixture well, kept stirring often, once I found it getting thick, I added a tbsp of ghee, stirred, then again another tbsp after few more minutes.
When the mixture got thick and left the sides, I greased a big plate and spread it to set, within 30 minutes, it was set and I'ld cut into pieces. You may cut into shape as desired.If you feel like as soon as you spread on the plate, you can sprinkle some chopped nuts and press it down, before setting.

Hubby also liked it, as when I have him one small piece before cutting, he asked for one more, then again another piece ! Unless, it is up to his taste , he'll not take more than 1 piece ! Going to share with my friends after lunch, as I find all dishes spicy, the after effect of eating pineapple last week, got like blisters as reaction to it. I'ld have added sugar and warmed my pineapple, as then it doesn't happen.

This is healthy dessert, having less ghee, I added 3 tbsp maximum, got carrot, good for eyes, Vitamin A and also fibre, oats again full of fibre, gur as iron, ghee also has Vitamin D.

BAKED MATRI

INGREDIENTS
maida/ all purpose flour 2 cups
ajwain  1 tsp
pepper pdr. 1 tsp
salt to taste
ghee 6 tbsp
water as required
red chutney with red chilies, garlic , tamarind and salt
green chutney with green chilies, coriander leaves, salt, onion, lime juice
flour to roll
ghee little to spread

METHOD
mix flour, salt, ajwain, ghee in a big bowl, till it resembles like crumbs
add water as needed to make a soft dough like for roti
divide the dough into 2
roll one part into a big roti, spread little ghee all over, leaving the edges
spread red chutney, sprinkle some maida all over
roll it tightly, cut into 1/2 " thick pieces, flatten the pieces with your hands or rolling pin lightly
spread it on a greased baking tray
repeat the process with the remaining dough, now spread green chutney, put the pieces on the baking tray, brush on top with little oil
bake in a pre-heated oven at 180 deg. C for 12-15 minutes till brown ( this will depend on your oven and voltage) so keep a watch after 10 minutes, as my OTG is small where it gets done faster than in bigger ovens.

RADISH ADAI

INGREDIENTS
radish grated 1 cup
atta/ wheat flour 1 cup
rice flour 2 tbsp
jowar flour 1 tbsp( OPTIONAL)
you can use mixed millets flour, then can reduce the quantity of atta
salt to taste
ajwain/ carom seeds 1 tsp
hing little
green chilies finely chopped to taste
curry leaves finely chopped 2 tsp
coriander leaves finely chopped 2 tbsp
oil to cook

METHOD
in a bowl, add the flours, ajwain, green chilies, hing, curry leaves, coriander leaves, grated radish ( don't squeeze out the excess water, if is there after grating), salt, mix all well
as required add batter to make like sticky dough, as this adai is spread with your hand !
if you can't stand the heat to spread directly on the hot tawa, you may spread like the size of small puris on a silicon sheet/ plastic sheet / foil, then carefully lift and spread on a greased tawa
cook on medium flame with little oil till brown on both sides
it can be served hot with pickle or onion/ tomato thoku .

NOTE- adding ajwain has many health benefits, helps for digestion, reduces flatulence( gas), aids in losing weight. This will make a complete meal, if you add some dark green leafy veges ( drumstick leaves/ methi) to the dough, as it will increase the iron and calcium content, it has carbs from the flours, radish is good for kidney and liver problems. curry leaves are rich in Vitamin E, coriander leaves and green chilies are rich in Vitamin C, when you've with thoku and may be some curd, you'll get more protein too.

DATES-CHOCOLATE BALLS

INGREDIENTS
ghee 2 tsp
normal de-seeded dates  1 cup chopped
black dates de-seeded 1/2 cup chopped
nuts ( cashew nuts, walnut, almonds) chopped 2 tbsp
cocoa pdr. 1 tsp
poppy seeds ( kaskas) roasted 1 tsp
white chocolate melted as needed
dark chocolate melted about 2 tbsp

METHOD
in a pan, heat 1/2 tsp ghee fry the nuts, keep in a bowl.
in the same pan, add rest of the ghee and add both the dates, mix well, cook on low flame till soft, remove, cool and blend in a mixie, put it over the roasted nuts, add cocoa pdr., poppy seeds, mix well with your hands.
if need be grease your hands with little ghee, to roll the mixture into small balls, put the balls in sticks
roll the balls in white chocolate, allow it to set, then drizzle some dark chocolate, let it set, serve.

ps- if you don't have sticks, no problem, simply roll the balls, roll in white chocolate, put it on a greased plate, let it set in the fridge for about 30 minutes, then drizzle dark chocolate, or you can coat one side with dark chocolate, let it set and serve.

Gramflour-Spinach Bake

INGREDIENTS
besan  1 cup
spinach blanched 1/4 cup
garlic chopped 1 tsp ( optional)
chili flakes / chili pdr. to taste
Eno fruit salt 2 tsp
water as  needed
tomato slices as needed
basil leaves 5-6
cheese grated as required
salt to taste

METHOD
mix besan, spinach, garlic, salt, chili pdr., add water, whisking well, so there are no lumps.
the batter will be like pancake batter. mix Eno fruit salt well
pour the batter in a greased micro safe dish
spread tomato slices, break basil leaves with hand and spread over
bake in microwave for about 3 minutes till set ( it depends on the power of your microwave)
add the grated cheese on top, microwave for another minute or till cheese has melted, serve hot with chutney/ ketchup and salad.

Sweet potato halwa

INGREDIENTS
sweet potato 2 big, peeled and grated in water
ghee 1 tbsp
cardamom pdr. 1/2 tsp
nuts finely chopped 1 tbsp
milk 200 ml
milk pdr. 1/2 cup
gur 1/2 cup
desiccated coconut 2 tbsp
brown sugar 2-3 tbsp

METHOD
grate and keep the sweet potato in water or in turns black, then wash well
heat ghee in a heavy or non-stick pan, add the squeezed out sweet potato, fry well in low flame for 3-4 minutes, add milk and coconut, let it cook and thicken, add milk pdr., mix well, along with gur and brown sugar, mix well, keep stirring in low flame from time to time, adding nuts.
once the mixture thickens, remove from flame add cardamom pdr. mix well.
when I gave to my friends, they couldn't make out there was sweet potato, could get the taste of coconut only !

Sago uttapam

INGREDIENTS
rice flour 3 cups
sago 1 cup wash and soak
curd as needed
salt to taste
oil as needed
mustard seeds 1/2 tsp
green chilies finely chopped 2-3
curry leaves finely chopped 2 sprigs
carrot grated 2-3 tbsp
spring onion finely chopped 3 tbsp
water as needed
hing little

METHOD
mix rice flour and soaked sago with curd well, keep it aside over-night if you want to make it for breakfast or if you want to make it in the evening, mix the batter in the morning
before making, add salt, heat 1 tsp oil in  a pan, add mustard seeds, once it crackles, add green chilies, curry leaves, hing, pour over the batter. Mix well
heat a tawa, spread some oil, make small uttapams, sprinkle some onion and carrot on top, cook covered on low flame for about 3 minutes, flip it and cook on the other side with little oil, covered for another 2-3 minutes. serve hot with chutney/ milagai podi.
This uttapam will remain soft, even if packed in lunch boxes.

Yam-sago pudding

INGREDIENTS
yam finely chopped and boiled 1/2 cup and mash lightly after draining
sago/ sabudana soaked 1/2 cup
milk 300 ml
brown sugar 5 tbsp
condensed milk 2-3 tbsp
cardamom pdr. 1/2 tsp
raisins  1 tsp
cashew nuts chopped 2 tsp
ghee 1 tbsp

METHOD
in a heavy kadai/ non-stick pan, heat ghee, fry raisins and nuts till golden and drain and keep aside
in the same pan, add yam, fry well on low flame stirring for 5 minutes, add sago, milk, mix well, cook stirring on low flame for the mixture gets thick and sabudana is also well cooked, add brown sugar, condensed milk, mix well, cook till thick, add cardamom pdr. 1/2 of the nuts and raisins, mix well. serve garnished with remaining nuts and raisins.

Yam Stuffed Kofta

INGREDIENTS
outer layer
yam cooked and mashed 1 cup
salt to taste
besan 2-3 tbsp
mix all these well
for stuffing
paneer mashed 1/2 cup
ginger-green chili paste 1 tsp
raisins 1 tsp
cashew nuts chopped 1 tsp
amchur pdr. 1/2 tsp
salt to taste
chili pdr. to taste
garam masala 1/2 tsp
coriander leaves finely chopped 1 tbsp
jeera pdr. 1/2 tsp
mix all these well
oil for deep frying
for gravy
oil  1 tsp
ghee 2 tsp
garlic finely chopped  1 tsp
onion 1 big finely chopped
bay leaf 1
dry red chili 1
cloves 2
cinnamon 1"
hing 1/4 tsp
tomato puree 1 cup
turmeric pdr. 1/4 tsp
chili pdr. to taste
jeera pdr. 1/2 tsp
garam masala pdr  1/2 tsp
kasturi methi crushed 1 tsp
salt to taste
coriander leaves finely chopped 2 tbsp
water 1/2-3/4 cup

METHOD
for koftas 
flatten the outer layer, put enough stuffing, roll well to cover, you can have it in round/ oval shape as desired, once all the koftas are stuffed and ready, deep fry in medium hot oil till light brown, strain and keep aside.
for gravy
in a pan, heat, ghee and oil, add garlic, fry well for a minute, add onion fry well with a pinch of salt till light brown, add bay leaf, cloves, cinnamon, dry red chili, fry for 2 minutes on low flame
add tomato puree, all the masala powders, salt, 1/2 the quantity of coriander leaves, water and simmer for 5 minutes, add koftas, let it simmer for a minute, serve hot  garnish with remaining coriander leaves with rice/ roti/ bread.

Suran/yam cutlets

INGREDIENTS
suran/ yam peeled, chopped, washed and cooked 1 1/2 cups
paneer/ cottage cheese 1 cup grumbled/ grated
ginger-green chili paste to taste
garlic paste 1 tsp optional
turmeric pdr. 1/4 tsp
chana masala 1/4 tsp
capsicum finely chopped 1/4 cup
coriander leaves finely chopped 1 tbsp
salt to taste
breadcrumbs 1/4-1/2 cup
maida / cornflour slurry as needed
oil for frying

METHOD
mash well the cooked yam, when still hot, after draining the water
add paneer, ginger-chili, garlic paste, turmeric pdr., capsicum, coriander leaves, chana masala, salt, mix well with mashed yam, add breadcrumbs as needed, first 1/4 cup, if need be add little more
make slurry, dip the shaped cutlet in the slurry, roll in breadcrumbs and shallow fry in hot oil in a pan till brown on both sides. 
Serve the cutlets hot with green chutney or ketchup.

Left-over rice onion pakoras


INGREDIENTS
leftover rice  1 cup
onion 1 big finely chopped
rice flour 2-3 Tbsp if needed
besan 1/4 cup or as needed
salt to taste
green chilies finely chopped to taste or red chili pdr. to taste
hing little
oil for frying
curry leaves 1 sprig finely chopped
oil for frying

METHOD
add onion, green chilies/ chili pdr, hing, salt, curry leaves, mix well
add rice, mix well, add besan first about 1/4 cup, mix well, add rice flour if needed
no need of adding water, as when you add salt to onion, it will leave out some water, then cooked rice will be wet enough to mix with rest of the ingredients.
heat oil, make small pakoras, deep fry in medium hot oil till brown and crisp, drain and serve hot.

Tips
I made this today, as we had some leftover rice and hubby loves onion pakoras, the ones we're buying were oily and add baking soda added, which I don't use, as adding soda when you fry, makes Vitamin B deficient in the dish. When you add rice flour itself, it make the pakoras crisp, if need be, you may add some hot oil. Or, you may add some fine semolina to the pakora batter to make it crisp.

Sweet-potato-corn-peas cutlet

 sorry the photo not very clear, that is the mixture ready for cutlet
cutlets ready to eat !

INGREDIENTS
sweet-potato 1 big, peel and chop fine
potato 1 big, peel and chop fine
sweet corn 1/4 cup or more
peas 1/4-1/2 cup
green chilies to taste
ginger finely chopped 1 "
salt to taste
rice flour 2-3 tbsp
fine suji/ semolina  2-3 tbsp
oil for frying ( you can shallow fry/ deep fry)

METHOD
after washing cutting and washing again sweet-potato and potato, I put in microwave bowl and cooked covered with wee bit of water for 4-5 minutes, stirring in between ( you can cook in gas or cooker too)
then I added corn and peas, mixed well, cooked covered for another 2-3 minutes
let it cool, in the mixer jar, I put chopped ginger and green chilies chopped, added the veges on top, without water, minced it, added the rice flour and suji as needed.
NOTE- I used suji instead of using breadcrumbs, so the choice is yours, add salt, mix well
heat oil, make cutlets as desired, fry, serve hot with chutney or ketchup as desired.
I used frozen corn and peas, you can use fresh ones too.

Unlike what most diabetics think, sweet-potato has the shape of pancreas, hence it is good for diabetics, it will not spike your blood glucose levels, as it is rich in fibre. Potatoes too good for diabetes, if not deep fried, and used with skin.
