Ingredients
brinjal cut into thin rounds as needed
oil for shallow frying 
salt to taste
lime juice little

for masala
3 red chilies
2 green chilies
ginger 1 tbsp chopped
coriander seeds 1 tbsp
turmeric pdr. 1/4 tsp 
grind all well

sprinkle little salt on brinjal pieces well on both sides, spread masala well , shallow fry on both sides till brown. serve hot with some lime juice.

Ingredients

onion cut long and thin  1 cup
oil 2 tbsp
butter 1 tbsp
ginger finely chopped 1 tsp
vegetable stock about 1 1/2 cups or use water
corn flour 2 tsp mixed in 1 cup water + soya sauce 1 tsp
salt to taste
spring onion chopped 2 tsp
cheese grated 2 cubes

Method
in a pan heat oil, fry onion till brown on low flame, remove cool, grind with little vegetable stock or water to a thick paste
heat butter in a pan, fry ginger, add onion paste, fry for 2 minutes on low flame, add vegetable stock/ water, then add corn flour mixture 
salt to taste, simmer for 10-15 minutes, then add spring onion and cheese, remove from flame and serve hot garnishing with some spring onion and toasted bread slices

Ingredients
radish 2 big grated
chana dal  2 tbsp
urad dal  1 tbsp
mustard seeds 1 tsp
cumin/ jeera 2 tsp
coriander seeds  2 tbsp
curry leaves 10-15
oil
dry red chilies 4-5 or as per taste
salt to taste
gur 2-3 tbsp grated or you can use 10=15 dates soaked in little water

Method
Heat 1 tsp oil fry grated radish till light pink stirring continuously, remove cool
in a pan, add 1 tsp oil, add the 2 dals, fry till light pink, then add mustard seeds, once it crackles, add jeera and coriander seeds, along with curry leaves and chilies, once all are well roasted, remove cool. grind these ingredients well, then add radish, salt and gur/ dates, grind well, adding little water if needed. this will go well with bread, roti, dosa, idli.

 Ingredients
onion finely chopped  1/2 cup
spinach/ palak finely chopped  1/4 cup
radish grated  1/2 cup
coriander leaves finely chopped  2-3 tbsp
saunf/ fennel seeds  1 tsp
besan/ gram flour  2-3 tbsp
rice flour 3 tbsp
soda bi-card  1/4 tsp
turmeric pdr.  1/4 tsp
hing  1/8 tsp
green chilies finely chopped as per taste or chili pdr.
salt to taste
water as needed to make mix
bread crumbs to coat
oil for frying

Method
mix all the ingredients, except the last 3 well, then add little water to mix, as it should be thick enough for you to roll it flat, then coat well in bread crumbs, then deep fry the vadas till brown and crisp, serve hot with chutney or ketchup

 Ingredients
for dough
all purpose flour/ maida 1 cup
 salt a pinch
ghee/ butter 2 tbsp
milk 3-4 tbsp
water as needed to make a soft dough
oil for frying

for stuffing
cashew nuts roasted and powdered 2 tbsp
peanuts roasted and powdered 2 tbsp
almonds powdered  2 tbsp
sesame seeds roasted  2 tbsp
dates/ figs finely chopped  2 tbsp
raisins chopped  2 tbsp
cardamom pdr. 1/2 tsp
condensed milk  2 tsp
honey 1 tsp
white chocolate pieces chopped 2 tbsp
cocoa pdr. 1 tsp
mix all well and make small balls

melted dark chocolate for coating 1/2 cup ( easy to melt chocolate in micorwave for 30-50 seconds depending on the quantity)

Method
take small amount of dough, roll, put stuffing, cover well , then deep fry till light golden, drain well
when cooled, dip in melted chocolate to coat well, refrigerate for 10-15 minutes to set well, then serve.

 Ingredients
normal limes ( that we get in India), washed, wiped dry and cut into 8 pieces or as desired
sugar  3/4  cup
vinegar  1/2 cup
red chili pdr.  1/2 cup or less
salt  1/4 cup
turmeric pdr.  1/2 tsp
hing  1 tsp
oil ( gingelly(til) oil or normal cooking oil    1 cup
mustard seeds  2 tsp

for powder
mustard seeds  1 tbsp
jeera  2 tsp
methi seeds  2 tsp
roast these till mustard seeds crackle, stirring continuously and nice aroma comes, cool and powder

Method

 In a big vessel, mix lime, sugar, vinegar, salt, turmeric well and store in a clean glass jar or porcelain pot, stirring well each day for 7-8 days
heat oil in big kadai, add mustard seeds, once it crackles remove from fire, after 2 minutes, add hing, chili pdr., lime, powdered masala, mix well, store in a clean and dry glass jar. If used carefully, this will last for 2 months at room temperature, then you may need to store in fridge if it lasts still !

 tips- mustard seeds like vinegar is a preservative, if it is roasted well, it also gives nice flavour . Jeera is good for digestion along with hing. Turmeric has got anti-inflammatory, anti-cancer properties.

1.Prevent Sugar from Crystallizing
Brown sugar is much healthier (and arguably – tastier) than white sugar. The only problem with it, is that it tends to clump and crystallize. To prevent this from happening, put a piece of apple in a small fabric pouch and add it to your container of sugar. The apple will increase the moisture and prevent it from clumping.
 2.Accelerate Ripening of Fruits
Some fruits emit a gas called Ethylene that hastens the ripening of other fruits. If you want those avocados and bananas to ripen quicker, place an apple next to them, that ought to do the job. 

3.Preserve Baked Goods
Bread and cakes tend to dry out quickly, even when kept in a sealed container. To keep them from drying out, put half an apple into the container you keep your baked goods in!

  • If the taste is not yet to your liking, simply let it sit until you're satisfied with the taste.
    7.Fix Over-Salted Food
    If you happen to add too-much salt to a dish you’re making, just cut a few pieces of apple and put them in the pot. The apple pieces will absorb the salt without damaging the flavor of the dish.

Did you peel too many potatoes or sweet potatoes? Don't throw out the extra ones or cook too much. Just take the uncooked ones, put them in a bowl with cold water, add a few drops of vinegar and put them in the fridge. The potatoes will last like this for another 3-4 days.

From Dry Munchies to Crunchy Munchies

Snacks such as potato chips or crackers are expensive and can take a big bite out of your budget over time, and so it can be quite annoying when a big bag of chips or crackers goes stale after only a few days. However, instead of throwing them away, put them in the microwave for 10 seconds. They will make a short trip back in time to a higher level of crunchiness!
 
Another option is to preheat an oven or toaster-oven to 200 degrees C, put the crackers or chips on baking paper (one layer) and heat for 1-2 minutes. 
 
Carefully take them out of the oven when they begin to get golden, and the crunchiness shall return. 
 
Please note: The freshness cannot be returned to crackers or chips that have begun to smell bed, are moldy or hardly have any taste.

While citrus fruit gives the body essential vitamins, its peel is also quite useful. It helps to keep away flying insects and ants, as well as neutralize moldy smells. Use scraped peel and rub it on surfaces that attract a lot of flying insects or ants.
 
Another option is to throw the peels in a blender, add a glass of water and grind until the mixture turns smooth. Then, pour the liquid on anthills or near the entrance of the house. Ground, used or dried coffee can be used to solve a lot of situations, so before you throw it away, you can:
 
- Use it as an ant repellent by spreading it a little where ant groups can be found.
 
- For skin peeling, you can massage coffee grains on your face and rinse.
 
- To fertilize plants, you can spread ground coffee on acidic earth
 
- To neutralize bad odors from the freezer, put a bowl of ground coffee (you can add a few drops of vanilla extract).
 
- To remove scents of foods from your hands, we recommend rubbing them together with ground coffee and then washing.

 Ingredients

big large firm bananas as desired
cut into half , then slit in half in the centre deep enough to put the filling at the same time taking care not to cut into half

for filling
fresh coconut grated preferred OR ( you can grind the coconut if not fresh one with soaked dates)
seedless dates as required soak in hot water
grind together, then add nuts of your choice and rotate just once the blender or else coarsely powder the nuts first, then grind dates and coconut
all spice pdr. 1/4 tsp
cardamom pdr. 1/2 tsp
mix all the filling well, stuff the bananas well
heat a tava, once hot, put a spoon of ghee/ butter, sprinkle about a tsp. of sugar
then place the banana pieces, cook on slow flame, as the sugar caramelizes , it will coat the bananas brown, make sure keep turning the sides all around, so it gets coated well all over. If desired serve with melted chocolate or strawberry sauce or ice-cream.


NOTE- you are free to change the filling as per your choice, you can choose apricots or cherries chopped, you can add sugar or honey too, which I avoided, as one banana itself is sweet, then dates and coconut make it sweet too. So, feel free to use your imagination.

Masala Paneer/ Cottage Cheese with dry fruit spread

 Ingredients
to make paneer
full fat milk  1/2 l./  500 ml
fresh coriander leaves finely chopped 1 tsp
spring onion finely chopped 1 tsp
green chili finely chopped 1 tsp
capsicum finely chopped 1 tsp ( in case you want, you can make only with green chili and dhania or dhania and onion, choice is yours)
lime juice 2 tsp
boil milk with the above ingredients and salt , once it boils, add lime juice, remove, stir well, once it curdles well, strain through a muslin cloth, till water drains, then shape like a square or rectangle and let it set
heat oil in a tava, fry the set paneer till brown on both sides, remove and keep aside

for gravy
oil 1 tsp
garlic 1 tsp ( optional)
spring onion 1 tsp finely chopped
water 1/2 cup
dates chopped 1/2 cup
dried apricots chopped 1/2 cup
chili flakes  1/2 tsp
turmeric pdr.  1/8 tsp
vinegar  1 tsp
dried fruits- pineapple, kiwi, mango or whatever you've
watermelon seeds 1/4 cup or you can use pine nuts or charmagaz,/ melon seeds
salt little

Method
heat oil in a pan, add garlic fry for a minute, add spring onion fry for another minute, add water, chili flakes, dried fruits and rest of the ingredients, simmer till dry
to serve spread little on paneer roasted, serve rest as dip for chips or papads or whatever you like Or you can use as a spread for bread and roti.

 

Protein Rich and Healthy Soya dosai

 Ingredients
soya chunks washed and soaked in hot water, squeezed out and ground  1 cup
udad dal  1/4 cup soaked for 3 hours and ground fine
rice flour 3-4 tbsp
salt to taste
green chilies finely chopped to taste
spring onion/ onion finely chopped  3 tbsp or more
curry leaves 1 sprig finely chopped
oil to cook

Method
mix the ground dal, soya chunks with rice flour with salt to get a batter like for dosa, in case it is too thick, add water as needed
to the batter add rest of the ingredients except oil, mix well, make dosa in hot non-stick tava or heavy iron tava, smearing little oil, on medium flame till brown and crisp on both sides, serve hot with chutney of your choice.

 Ingredients
whole wheat flour for dough

for filling
udad dal cooked, dal shouldn't be overcooked, it should be separate  1/2 cup or as needed
onion 1 big finely chopped
fresh coriander leaves finely chopped  3 tbsp
green chilies 4-5 finely chopped or as per taste
salt to taste
finely grated carrot  2-3 tbsp
garam masala 1/2 tsp
mix all the ingredients well just before ready to make parantha

Method
roll out a thick roti or flatten dough with centre thick, put enough stuffing, cover well, roll out as thin as possible, cook on hot tava till brown on both sides with ghee/ oil
serve hot with pickle or dal and raita

Ingredients

oats 1 cup
whole wheat flour  1 cup
salt
curd  1/2 cup
water to knead

for filling
moong sprouts 1/2 cup
lobia/ channa sprouts  1/2 cup
salt and green chilies finely chopped to taste
 lime juice 2 tsp
hing 1/4 tsp
jeera  1 tsp
oil 1 tsp
onion finely chopped 2-3 tbsp ( optional)
ghee for frying

Method
mix oats, flour, salt well, add curd, mix well, add water as needed to make a soft dough. keep it covered for 15-30 minutes
In the mean time, heat a pan, add oil, once hot, add jeera, as it crackles, add hing, green chilies fry for a minute, add onion if using, fry till light pink, add the sprouts, salt, mix well, keep covered for 2-3 minutes, remove add lime juice, cool
take enough dough, either roll it small or flatten with your hand with centre thick like a cup, put enough stuffing, cover well, roll out as thin as possible, making sure the filling doesn't come out, cook on hot tava till brown on both sides adding ghee, serve hot with chutney/ pickle and raita/ curd.

 Clean rusty knives: If your knives are rusting, jab them into a large, raw onion.

 Keep avocados from turning brown: A slice of red onion can be placed alongside an avocado in an airtight container to prevent it from browning. You may also add slices of red onion on top of guacamole.

  Soak up the smell of burnt rice: A great way to get rid of that smoky smell from burnt rice is to place half an onion next to the stove to absorb the smell.

 Ward off ants: If ants are a problem you face at home, leave a bowl of raw onion slices out. The scent should ward them off.

 Create a DIY dye: While onions appear translucent in color, they make a beautiful vibrant red or orange dye. Just gather the skins and place them in a pair of nylon pantyhose or a nut milk bag and tie a knot at the end. Boil them in a pot for about 20 minutes. The liquid should be a bright dye, perfect for paper, yarn or fabric.

 Polish metal: Prepare a mix of crushed onion and one part water. Then, using a damp cloth, rub the mixture on a metal surface, until it appears shiny and clean.
