Ingredients
6 large Medjool dates pits removed
1/2 cup almond butter
1/2 cup old fashioned oats
1/2 cup raw unroasted cashews
1/4 cup coconut oil
1 1/2 tsp. pure vanilla extract
2 tsp. cinnamon pdr divided
1/2 tsp. salt + more
2 Tbsp. coconut flour
2 Tbsp. coconut sugar
Preparations
In a food processor, pulse dates, butter, oats, cashews, oil, vanilla, 1
1/2 teaspoons cinnamon, and 1/2 teaspoon salt until combined and a
sticky dough forms, 1 to 2 minutes.
Line a baking sheet with parchment. Using a 1 1/2-tablespoon cookie
scoop or a tablespoon measuring spoon, scoop mixture and roll into
balls. (If mixture is too sticky to handle, refrigerate until firm
enough to roll.) Arrange balls on prepared baking sheet.
In a medium bowl, combine flour, coconut sugar, a pinch of salt, and
remaining 1/2 teaspoon cinnamon. Roll balls in flour mixture and return
to baking sheet. Refrigerate until chilled, about 30 minutes.
