Chickpea (Garbanzo Beans) Based Mayonnaise

Chickpea (Garbanzo Beans) Based Mayonnaise 

Ingredients:  
 
Vinegar - 1 tbsp. 
 
Mustard - 1/2 tsp. (minced) 
 
Salt - 1/2 tsp. 
 
Canned chickpeas liquid - 3 tbsp. 
 
Vegetable oil - 1 1/2 cups 
 
Method of Preparation:  
 
Mix the vinegar, mustard, salt and 3 tablespoons of canned liquid with a hand blender for 2 minutes. 
 
After you finish stirring, gradually pour a quarter cup of oil and continue blending. 
 
Be sure to move the blender around the bowl with rotating movements until the mixture is airy. Transfer to a jar and refrigerate.
 
Chef's Tip: Toward the end of mixing, add a little maple syrup instead of vinegar (or in addition to) to get some light sweetness.
