Mango-foxnut barfi


Though today was a hectic day visiting doctor's clinic, thought I can finish this dessert before going to the clinic, as we had a 11.30 appointment, but had to stop half-way through, as it started bubbling up and out of the microwave dish😅, left it thinking that  we'll finish doctor's appointment quickly. But we're spending hours waiting for the specialists, missed our lunch, then had to grab something to eat by 3, as hubby's sugar level was dropping. Came home tired by 3.45. 
Again tried my luck by keeping in low power in microwave, again bubbling over, got tired, took out a big vessel, which is my favourite, preserved from stay in Dusseldorf, ages ago !
Then I kept it low flame, stirring from time to time, switched off as we're getting late for dinner in our gated community. Once again, switched on the gas, kept stirring on and off every few minutes, was making up for my missing my day's walk ! Ultimately it got done.

INGREDIENTS
milk 1 litre
mango frozen 1/2 cup ( as I had it frozen for long wanted to use it)
cashew nuts 20
fox nuts / makhana  25
sugar about 1 heaped cup
ghee / clarified butter 2 tbsp
milk pdr.  3 tbsp
cardamom pdr.  1/2 tsp

METHOD
make a paste of mangoes and cashew nuts adding little milk to a smooth paste
add fox nuts in the same jar, pdr little, then add milk and make a fine paste
mix both the paste well.
I added about 250 ml milk in a non-stick pan, kept stirring from time to time, once it boiled and got little less, added another 100 ml roughly, kept stirring, like this I added my milk , once it thickened, I added the ground paste, mixed well
In a bowl I added 3 tbsp milk pdr, added little milk to make a fine paste, added to this to the already boiling mixture, mixed well
once it boiled for a few minutes, I added sugar , that is when I transferred to a microwave safe bowl, thinking it will make my task easy, but had more work, cleaning the microwave and transferring to another bigger dish and wash the glass bowl.
Well, after adding sugar and, milk pdr mixed in milk, I kept stirring till it get thick, added 1 tbsp of ghee, mixed well and let it cook, once again I added more ghee and continue to cook till it became thick and in a mass, added cardamom pdr. mixed well and spread it on a greased plate.

There hubby returns after meeting his friends and playing, tasted it and wanted to know its ingredients, as he heard me grinding for sometime!
I always like to try something different, like my papaya halwa !

NOTE- you can use fresh mango if you've.
even if you don't have fox nuts, you can make it with mango and cashew nuts or you can use almonds or mix both nuts.
instead of adding milk pdr., you can add khoya, but as these days most of khoya are adulterated, I prefer to use milk pdr, as you get the same taste.
