Don't throw cauliflower greens- highly nutritious !

Cauliflower greens: The leaves of cauliflower that we normally throw away contain the highest content of iron and fibre among all green leafy vegetables. It can be boiled and added to soup, chapatti dough, dals etc.

The fruits and vegetables which have high pesticide residue

Each year, the environmentalists release their list of fruits and vegetables that rank highest in pesticide residue. If you can opt for, there is nothing like choosing organic versions for the biggest benefit of the family. But, if your budget is limited, then below is a list of veges and fruits that you should be weary of-
1) potatoes,
2) celery
3) tomatoes
4) Pears
5) cherries
6) peaches
7) grapes
8) apples
9) nectarines
10) kale
11) spinach
12) strawberries

What one can do is wash well and soak grapes for at least 30 minutes in water , wash well, drain and then eat.

Since most apples are coated with wax to prevent it getting spoiled, best is to wash well, peel the skin and eat, though most of the nutrients are below the skin !

One pot -Millets Chocolate Cake- Eggless ! Microwave

Yesterday, I was in a mood to bake a chocolate cake, actually wanted to bake a brownie, then changed my mind. I didn't want to use the all purpose four / maida, as being a cancer survivor, people keep saying avoid everything white- no white salt, have Himalayan pink salt, that is what I use and I also found that I need to use less salt than the normal white one. I stopped using white sugar, instead use brown or molasses / gur pdr. even in my tea now. In the same way, instead of maida, wanted my cake to be healthy, tried with finger millet ( ragi flour), which I use for making my kanji / porridge, mixed with nuts, lentils etc powdered.

Ingredients
banana 1 small ( will be equal to 1/2 of normal green banana)
cooking oil 1 tbsp
brown sugar  4 tsp
molasses pdr.   4 tsp
vanilla essence  1/2 tsp
millet mix flour about 1 cup
milk about 4 tbsp or so
salt a pinch
baking pdr. 1/2 tsp
baking soda  1/4 tsp , mix well the last 2 with flour.
cocoa pdr.  2 heaped tsp

Method
mashed the banana well, added cooking oil over it, so that it won't turn brown. I first thought of baking in the morning, then as I changed my mind after mashing banana added oil .
Added brown sugar and gur pdr., mixed well with a spoon, I did this in the microwave safe small pan.
Then I added 1/2 of the millet flour, mixed well, then added little milk at a time, added rest of the flour, and added milk to get the right consistency, as when I bake in normal microwave, the batter has to be slightly thinner than what we need to bake in an oven.
added essence, mixed well, clean the sides of the pan.
Micro in high power for 3 minutes. It was ready.
I wanted to add some nuts and raisins or chocolate chips, then mind got diverted as I got a call. Just kept it in microwave.

Unexpected guests came, served them the cake with some nice hot spiced tea and some namkeens. They really liked the cake, as it was really soft, they're surprised that it was also egg-less.

Sorry as the guests came, I didn't have time to take photo of my cake.

Some Simple Kitchen Hacks

Some of these hacks you may be aware of, then there are many more useful ones for you all here. Hope this helps to keep your foods safe without getting spoiled and wasting your money.

Don't keep onions and potatoes together
Ever wondered why your potatoes aren't lasting very long? Start by storing them in separate place to your onions. Both potatoes and onions release moisture and gases that will cause the other to spoil faster, so make sure you keep them apart.

Garlic should never be kept in the fridge
The worst way to store garlic is in a sealed container in the fridge, which can cause the bulb to sprout and develop mold. Instead, place your garlic somewhere dry and dark, and keep the bulb together for as long as possible. Once, you've separated the cloves, they won't last longer than a week.

Wrap the crown of a bunch of bananas
Much like avocados, bananas don't have too long a shelf life. To keep them looking fresh, wrap the crown of each bunch with clingfilm. This will slow down the ripening process and they'll last 3-5 days longer.

Don't wash fresh produce before putting it in the fridge
Washing fruit and vegetables before you refrigerate them will produce excess moisture, causing them to spoil faster. If you need to give you food a rinse, make sure you do it just before cooking .

Don't put bread in the fridge
You might think popping your bread in the fridge will help prevent it from drying out, but it'll actually go stale quicker than at room temperature. Cold temperatures cause the starch in bread to recrystallize more quickly than it would in a warmer environment( leading to staleness)- so dust off that bread bin and keep your loaf out of the cold.

Rinse berries in vinegar solution
Berries are delicious fresh, but they don't last for long. To help preserve them, wash them in a mixture that is one part vinegar and 10 parts water, then drain, rinse and pop them in the fridge. Don't worry, the solution will be diluted enough that you won't taste any of the vinegar. The berries should last one to 2 weeks without going moldy!

Preserve cheese
You can also use vinegar to help rescue cheese. All you need to do is dampen a paper towel with the same mixture, wrap it around the cheese and store it in a plastic bag. Again, the solution will be diluted enough that the taste won't be impaired.

Store fresh mozzarella in water
Balls of fresh mozzarella can quickly become dry or turn sour once sliced. Extend their life in the fridge by storing them in water. If you ensure all the cheese is covered, it should last for around 3 days.

Freeze your fruits
If you've got fresh fruit you're not going to eat, bag up small portions and freeze it instead. You can use frozen fruit straight away in smoothies or cook it in crumble, pies and jams. This method will work with everything from bananas and apples to blackcurrant and mangoes. Frozen fruits can be used to make kulfi too !

Store asparagus like a bunch of flowers
After a while, asparagus can start to look a little limp. To keep it fresher for longer, cut the stems off your asparagus, place them in water ( not too much), and then put a plastic bag on top before refrigerating. This will keep them crisper for longer.

The same goes for herbs
Just like asparagus, fresh herbs such as basil and parsley fare best when treated like a bunch of flowers. Cut back the stems, and place them in a jar of fresh water. Ensure they get enough light and are kept away from extremes of temperature.

Don't let rotten apple sit with the rest
We've all heard the phrase " one bad apple spoils the barrel" and it's true. As they ripen, apples, much like fruits, produce ethylene, a ripening agent. When you store fruits together,  the ethylene from each fruit causes the others to ripen faster too. So, if you see an apple looking a little worse , remove it straight away.

Buy an ethylene gas absorber
Add it to your mote, if your fridge is constantly full of fresh fruit and veges, buy yourself an ethylene gas absorber. Costing around 5$ (4 pounds), the absorber sits in the fridge and helps to soak up all of that troublesome ethylene, extending the life of your fruit and veges.

Freeze pesto as ice cubes
Pesto is a great addition to pasta, but can start to spoil very quickly. To keep it fresh, pour the remaining pesto into an ice-cube tray and freeze it, so you've always got some on hand when you need it. Once frozen, you can put in a zip-lock bag in the freezer.

Freeze veges to make smoothie packs
It's not just frozen fruit that works well in a smoothie. Leafy veges such as kale and spinach freeze just fine and can easily be blitzed up to make a juice. If you're a fan of smoothies, this hack might just transform your mornings.

Put a paper towel on top of your salad
Lettuce is great on the 1st day, but after you've opened a bag of salad, you'll see a quick decline. Placing a paper towel on top of the leaves will soak up all the excess and prevent them from wilting as quickly.

Invest in a salad spinner
Alternatively, invest in a salad spinner and spin your leaves to remove all the  moisture before storing. This will help them to last longer without turning into one soggy mess.

Dry your herbs in the microwave
If you're struggling to keep your herbs alive, try popping them in the microwave to dry them out. Place them in between 2 paper towels and zap them for 1 minute, followed by a few 20 second bursts until they're completely dry.

Cut the tops off your carrots
Carrots might look pretty with their green stems, but those leafy tops are actually stealing nutrients from the rest of the carrot. Chop them off to keep your carrots for longer.

Freeze fresh herbs or chili on oil
Another handy hack for preserving fresh herbs and chili is to chop them up and pop them into ice cube trays with olive oil or melted butter. Harder herbs( rosemary, thyme etc) can also withstand being plucked from the stem and kept in jars in the freezer.

Freeze fresh pasta for quick meals
Cooked pasta can turn to mush (unless it's frozen after being cooked al dente). But tightly wrapped fresh pasta freezes well for up to 2 months, so it's certainly worth keeping some for nights when you've a little less time.

Wrap veges in aluminum foil
Wrapping veges like cucumber, lettuce and celery in aluminum foil helps to allow the ethylene gas to escape, while still holding enough moisture for the food to stay fresh. Storing them this way should keep them fresh for at least a week longer.

Freeze your milk
Freezing fresh milk is a great hack if you're going away. Skimmed or semi-skimmed milk can last for up to a month in the freezer. However, fat requires an extremely low temperature to freeze ( lower than the average freezer) so this won't work as well with whole milk.

Pop some marshmallows in your brown sugar
If kept for a while, brown sugar can become dry, clumpy and hard- but there are a couple of quick fixes.Firstly, you'ld transfer the sugar from its bag to an airtight container ( this will keep it from losing too much moisture). Next pop a couple of marshmallows into it. It may seem strange, but the moisture from the marshmallows will help keep your sugar soft. Bread has a similar effect but can go moldy.

Make your yogurts into lollies
Yogurts have a short shelf life, but they'll last monger of they're frozen into delicious lollies. Simply take yogurt pot, stir the contents ( mixing in some fresh berries if you fancy), pop in a lolly stick or kulfi mould and freeze upright.

Store your peanut jar upside down
The oils in natural peanut butter separate with time. To help keep your spread to the right consistency for longer, store it upside down. This helps the oils distribute evenly, so you'll not have to re-mix it every time you fancy peanut butter on toast.

Transfer flour to an airtight container
Leave your flour in the bag it came in and you're shortening its lifespan considerably. You're best off moving it to an airtight glass or plastic container, where it will will retain its natural moisture. Most people don't think of putting flour in the freezer either, but it actually freezes perfectly well. If you're not a regular baker, keep it here until you're ready to use it ( just make sure you bring it back up to room temperature before you do).

Fashion an onion holder out of tights
A great way to store onions for a long period of time is in a clean pair of tights,as they let the correct amount of air and moisture in. Place an onion in the foot of the tights, then tie a knot immediately after it- repeat this until the tights are full. You can then hang your makeshift onion holder in the kitchen in a cool, dry place. Stored in this way, onions can last up to 6 months.

Transfer your coffee to an opaque container
Whether your coffee is whole or ground, light is its ultimate enemy. It can impair the color and taste, and cause it to spoil faster. So, while it might be tempting to store your coffee in a jar that it comes in, or any clean jar, coffee is best kept in an opaque container.

Use leftover orange juice for marinades
If you're left with some orange juice at the end of the carton, it has no need to go waste. While orange juice doesn't last long opened, it can be used as a base for homemade marinades. We recommend adding some soy sauce, honey and seasoning to the orange juice, and then marinating your favourite dish in it.

Cook your meals in bigger batches
If there's no way you'll make it through all the fresh produce in your fridge, batch cooking could be the way to go. Just double ( or triple) the amounts in your recipe and dole out the extra helpings into an airtight container. Choose dishes that freeze well ( think chili, lasagna or curries) and look forward to feeling suitably smug when dinner time rolls around.

Spray leftover guacamole with vegetable oil
There's nothing better than guacamole with your tortilla chips, but there's little chance of it lasting the evening. According to experts, the trick is to spray leftover guacamole with a little non-stick oil. This creates an oxygen barrier around the mashed avocado and stops oxidation from occurring ( which makes it turn brown). So get spraying, then wrap it in some clingfilm and store it in the fridge.

Here, in one of my earlier posts, I've also mentioned how to keep your left over avocado without spoiling or turning brown by putting lime juice all over the cut edge !

Substitutes For Food Allergies

Gluten allergy - instead of  3 cups wheat flour, use rice flour 2 cups, 2/3 cup potato flour, 1/3 cup tapioca flr., you may need a binder like xanthan gum

Egg allergy- 1 egg= 1/2 big mashed banana OR 1/4 cup apple sauce.
Just remember that if a recipe calls for more than three eggs, using a substitute might not work—the end result just won’t have the right consistency. Also: Keep in mind that packaged egg substitutes found in the refrigerated section of the grocery store still contain eggs, so steer clear of them.

Instead of egg whites, use: aquafaba. It might sound strange, but the liquid that comes in a can of chickpeas (called aquafaba) can be whipped up just like an egg white. It can mimic a meringue (whip it for 10 to 15 minutes) or can replace eggs as a binder (just whip it up until it gets foamy). Use 3 tablespoons of the foamy aquafaba instead of an egg or 2 tablespoons to replace a single egg white.

Dairy allergy

Use soy milk, rice milk, oat milk

Instead of cream - full fat coconut milk. Just note that it will impart some coconut flavor, so it’s best to use it in recipes where that coconut will complement the other flavors (say, with chocolate cake).

Instead of buttermilk - any milk alternative 1 cup + 1 tsp of vinegar

Nuts allergy

instead of nuts use - pretzels OR pumpkin seeds OR Sunflower seeds

Instead of butter- use flax seed butter or sunflower butter

Apple-pear-oats pudding ( vegan- no milk, no fat)

INGREDIENTS
apple 1 peeled and finely chopped
pear  1 finely chopped
gur/ molasses  4-5 tsp
dates finely chopped 2 tbsp
oats roasted and powdered 1 1/2 tbsp ( optional, as I had I used it)
oats  2 tbsp
water 11/2 cups approximately

METHOD

in a microwave safe dish, add apple, pear cinnamon pdr. and 1 tsp. of gur pdr.  about 3 tbsp water, mix well, microwave on high power for 5-6 minutes, taking out and stirring well in between.
It should be soft enough to mash coarsely with a spoon
added oats, pdr. gur, water as needed, mixed well, micro on high for 2 minutes
removed, added chopped dates, mixed well, micro high for another 90 seconds
Your healthy fruit pudding is ready.

Note- you may add brown sugar if you don't have gur pdr./ molasses or normal white sugar or sugar substitute.
Now-a-days, I try to avoid as much as possible white sugar, all purpose flour, try to use whole wheat flour or millet flour, or where possible oats either as it is or roast and powdered to have healthy dessert. There is also no fat in this pudding. So, those who are vegan can also have it.
Having sweet tooth, I don't want to miss out on my dessert, but when I make, I prefer to eat healthy, as doctors keep saying lose weight ( which isn't easy, being cancer survivor, as they say avoid white flour, white sugar, now using brown sugar or gur pdr. even for my tea !)

How To Extend Life Of Cast Iron Pan

Cast iron pan is one of the essential kitchen vessel in many homes. It is also healthy to cook in iron pan, as it helps one to absorb iron, when wee cook in such pans. No wonder in earlier days, people weren't anemic, as they used lots of cast iron pans in their cooking ! Only thing, one should not leave the cooked food in the same pan, as it can turn colour due to the reaction of the chemicals from the food with iron. So, immediately transfer food to another pan !

Some people feel it is a tough job to clean cast iron pans. Now some simple tricks to clean then easily. Cast iron requires a lot of dedicated upkeep. Technically, you can simply rinse it with (a little) soap and water, but this much more intensive (and our preferred) cleaning method will ensure it lasts longer.

Yet stuck-on food is a persistent issue with cast iron pans. Sometimes a heavier-duty method is required to clean it thoroughly, and it involves an item you have in your pantry right now.

How To Season a Cast Iron Skillet

What You Need

Materials
  • Dish soap
  • Sponge or stiff brush
  • Clean, dry cloths or paper towels
  • Vegetable oil or shortening (or other oil of your choice)
  • Aluminum foil

Instructions

  1. Get ready: Gather your supplies and then preheat oven to 350°F.
  2. Wash the skillet: Wash the skillet with warm, soapy water and a sponge or stiff brush. Cast iron should not normally be washed with soap, but it’s fine here since the pan is about to be seasoned.
  3. Rinse and dry: Rinse and thoroughly dry the skillet with a clean, dry cloth or paper towels.
  4. Add oil: Pour a little vegetable oil or melted shortening into the skillet. A tablespoon or two is plenty. Vegetable oil and shortening are the most commonly recommended oils used for seasoning, but according to Lodge, you can use any oil of your choice.
  5. Rub: Use a clean cloth or paper towel to rub the coat around the entire skillet.
  6. Flip the skillet over: Don’t forget the outside — and bottom — of the skillet. You want a thin coat of oil around the entire piece.
  7. Bake the skillet: Place the skillet upside down on the oven’s center rack. Place a sheet of aluminum foil below the rack to catch any drips. Bake for an hour.
  8. Let the skillet cool: Turn off the heat and allow to the skillet to cool completely before removing from oven. Once it’s cooled down, you’re good to go!

Note

  • A seasoned skillet is smooth, shiny, and nonstick. You’ll know it’s time to re-season if food sticks to the surface or if the skillet appears dull or rusted.

15 Amazing Life Hacks You’ll Need While Washing Dishes

I'm sure that most people who love cooking, don't have the same feeling when it comes to washing the dishes. Now, with these hacks, it will make your task easier and quicker too.

Another simple tip, I've seen most people use a lot of dishes when they're cooking a simple 2/3 course meal too. I'm one, who hates putting too many dishes to wash. So, I plan to use the dishes as per the menu. Suppose I need a pan to cook the veges, then I use that pan to do the seasoning first for other dishes- like it can be sambar / rasam/ dal etc then one vessel less for sure. Then when I'm using lentils/ dal with veges, I pressure cook it along with rice, so it saves time and I can just season it, let it simmer for a few minutes, to serve.

1. Use Soda to Clean Dirty Dishes

Soda isn't good for your health, or your teeth, but it can be an extremely effective cleaning agent. It's also a great way to make use of that Coca Cola or Pepsi you bought for a party but is now just taking up space in your fridge or pantry (while you’re fighting off the urge to drink it).
Just soak any pots that have scorch marks or burnt stains in soda and watch them practically vanish overnight, as attested by Jennifer Gregory, the brand manager of Molly Maid, a residential cleaning franchise.

2. Soak Your Dishes Beforehand

In case it’s one of those days (or nights) when the dishes are just not a task you want to deal with, it’s advisable to leave them to soak in water. For best results with dishes you might not get to for a few days, leave them in a pan or even a plastic basket with soap water. This will make the task a little easier when you finally get around to it.

3. Turn On Your Gadgets to Clean Them

With some of the larger kitchen appliances, it can be hard to clean out the bits that have accumulated in corners. Food can get stuck under the blades in blenders or in slow-cookers. Even coffee pots get their fair share of build-up.
An easy way to clean them is to add a little soap water or dish detergent to the gadget and run then normally for a little while. A few seconds can be enough to dislodge most food from the blender. For slow cookers and coffee pots, you can let the soap water sit for an hour, keeping the slow cooker on low heat.

4. Don’t Overload Your Dishwasher

Most washing machines release a predetermined amount of water in any given cycle. So it may feel like you’re cutting your work in half by fitting every nook and cranny of the dishwasher with some small utensil or the other.
But in reality, you’re doubling your work, as there won’t be a wide enough distribution of water to get the dirt off all the dishes. You’ll end up having to re-do it. Fewer dishes in the machine means a more thorough cleanse of your dishes.

5. Vinegar and Its Many Cleaning Uses

According to an expert of a natural cleaning supplies company, boiling a little bit of vinegar can remove stains built up at the bottom of any pan. You can add a little bit when you load your dishes into the dishwasher to help remove any extra stains or grease.
Vinegar can be used to rid wine glasses of that cloudiness that tends to build up over time, according to her. It can also help in ridding pans of greasiness.

6. Position Your Utensils Alternately

When you’re loading utensils into your dishwashing machine, make sure to flip-flop your spoons and forks before putting them in. Place some of the utensils with the utility facing up and alternate ones with the handle facing up.
This will ensure that none of the spoons and forks become nestled together, which can leave them still dirty after a wash. For obvious safety reasons, all knives should be placed with the handle up only.

7. Use Cold Water to Clean Starch and Dairy Remnants

Cold water is usually not the preferred choice for getting out stains. Hot Water is ordinarily more effective at cutting away grease, and it has the added bonus of drying faster. But in the case of dairy and starch products, like lasagna, pasta and many kinds of desserts, hot water can make the pan stickier. Using cold water will make the job much easier.

8. Don’t Rinse Your Plates

This piece of advice mainly applies to those who make use of a dish-washer specifically. Before loading your dishes into the machine, scrape the food off your plate but don’t rinse it.
Not only does it make your job easier, the food particles can also help make your dishes cleaner during the wash cycle. This is because they act as aggregates to the cleansing process. And it’s one less thing to worry about when you’re loading in dishes.

9. The Cleansing Power of Lemon

Another great piece of advice from another is to use lemons while cleaning. They are particularly effective against those tough-to-remove stains and heavy grease build-up. In that way, lemon juice has similar cleansing properties to vinegar.
You can even place a lemon wedge in your dishwasher before starting a wash cycle. It will give your dishes an extra sparkle and will also leave them with a fresh and lemony scent. Why buy lemon based detergent when you can just use the real thing?

10. Aluminum Foil Can Clean Your Silverware

The expert further suggests using aluminum foil to make cleaning your old silverware easier. It’s a simple recipe of sorts that starts with lining a cake pan with aluminum foil. Fill the pan with a few cups of water. For every two cups of water, add a tablespoon of baking powder. Put the pan in the oven and heat the water to 150 degrees.
Once the water is hot, just place any dingy silverware you have into the water and ensure it is all touching the aluminum foil. Let them sit for 30 to 60 seconds (depending on how much shine it needs) and then remove the silverware using tongs. Clean with a rag to see the new shine!

11. Clean Your Sponge
A study conducted in 2017 revealed that the common household sponge tends to gather an enormous amount of bacteria. While frequently washing the sponge under the sink does help, there is still a fair amount of dirt that remains accumulated.
Throw your sponge in with your next wash cycle. The study also suggests heating the sponge in a microwave for a short period of time, boiling the sponge or rinsing with hot, soapy water can reduce its bacteria content.

12. Check your dishwasher for residue.

The founder of a high end cleaning company  says that limescale build up in your dishwasher can be a major problem. That’s why it's important to frequently descale your machine, or the build-up could affect the flow of hot and soapy water in your dishwasher. However, he also says the problem can be tackled by topping up your machine with some dishwasher salt.

13. Clean Wooden boards with salt

Wooden cutting boards can be tough to clean fully. Every day, we use it to chop and cut a variety of foods. So after a while, a normal rinse might not be enough to keep it bacteria-free. After giving your board a good rinse under warm water, take a few tablespoons of kosher salt. Using half a lemon, spread the salt in concentric circles across the board and rub it in well. Another rinse in warm water will have your cutting board looking spotless and as good as new.

14. Keep An Extra Rack For Dishes

An easy-to-access rack near your dishwasher can make unloading the dishes a much easier task. It can also make drying dishes simpler (if you don’t have a dryer). On the flip side, plastic or glass baskets can be ideal for stockpiling dirty dishes. Having a basket for dirty dishes can help you keep your sink clean on busy days. And you can add water and detergent to the basket for your dishes to soak in till you can get to them.

15. Don’t Let The Dishes Pile Up!

This is just a general tip, especially for the procrastinators like me out there. One or two dishes can pile up to twenty faster than we realize. Taking a few minutes a day to wash the dishes will help keep your kitchen clean and hygienic. And it’ll save you some time later!

Like stitch in time saves nine, in the same way, for those who don't have dish-washer, or have very few dishes, then best to keep washing dishes as it is there in the sink. I keep washing the dishes, soon after our morning coffee, then after breakfast, lunch. If I'm cooking, then wash the dishes as cooking is done. I never like to pile up dishes to wash.

Another trick I use is, to wash those dishes like milk pan, or one in which I make porridge or simmer my milk with turmeric and garlic at night, I soak it in water, use the cleaning brush first to remove whatever gets stuck around, wash the brush, then it is easy to clean the dish too.
