Mango Chutney

Ingredients:

 Raw mango  1
Coconut  ½ cup
Green chillies  3-4 as per taste
Salt   to taste
Curry leaves  1 stem
Ginger  1 piece

Method
Cut mango into small pieces.
Grind coconut, green chillies, ginger, salt and mango pieces together to a fine paste adding little water
Mix thoroughly. 
Season with mustard seeds and curry leaves for garnish.

Mushroom salad

Ingredients

 button mushroom  250 gm
 pepper pdr and salt to taste
 lemon juice  1/2 tbsp
olive oil- 2 tbsp   
1 tbsp fresh coriander leaves finely chopped
1/2 cup - grated carrot
capsicum finely chopped 2-3 tbsp

Method
Clean the mushrooms and cut into half. Saute in a pan in low flame for 5-10 minutes.
Mix  salad oil, pepper powder,  salt, lemon juice.
Mix well carrot and capsicum, mix with salad dressing.
Pour it over the mushrooms and toss.
 Chill for a couple of hours, garnish with fresh coriander leaves.

Mushroom toast

Ingredients

   1 packet sliced mushroom/ 200 gm
    4 - bread slices
    1 tsp - oil
    1 - onion
    1 - tomato
   pepper pdr. and salt to taste
  

Method
Heat oil in a pan, fry chopped onions and tomato for 2 minutes.
Add mushrooms, pepper pdr, salt  and cook for 2 minutes. 
Spread mixture  on bread slice toast on a tawa/ non-stick pan and serve at once.

Pepper Mushroom

Ingredients      

1 -  packet mushroom/ 200 gm 

1 capsicum

pepper pdr and salt to taste

1 tsp - soya sauce

onion 1 big finely chopped

Oil  1 tbsp

Method

Heat1 tbsp of oil in a frying pan and add the finely chopped onions. 

Fry till it turns brown. 

Then add pepper powder, salt and fry for few seconds. 

Add the washed mushroom (cut in small pieces). 

Stir well and add soya sauce. 

Stir well, for a minute. 

Add the chopped capsicum and stir well. 

Cover and cook for a 4 minutes

Eat hot with steaming rice/ bread/ roti.

Spicy cottage cheese cubes

Ingredients
300 gms paneer/ cottage cheese
2-3 tbsp oil
4 tbsp gram flour (besan), 1 tbsp oil
2 cubes cheddar cheese – finely grated (8 tbsp)
Green paste
½ cup coriander leaves
 raw mango grated ¼ cup
3 green chillies
1 tbsp chopped ginger
½ tsp cumin seeds (jeera)
 3-4 cloves/ lavang
 3-4 pepper corns / kali mirch
1 tsp ground cinnamon (dalchini powder)
½ tsp rock salt
 1 tsp chaat masala

Method
 Cut paneer into slightly thick (½” thick) cubes. Cut a slit from one tip almost till the end, but keep the piece whole.
 Heat 1 tbsp oil in a non stick pan. Add gram flour and roast for 2 minutes on low heat till fragrant. Grind all the ingredients of the green paste to a thick paste. Remove to a flat bowl.
Fill some paste in the slit of the paneer cubes.
To the remaining paste, add roasted gram flour and grated cheese. Check salt.
 Marinate paneer in the prepared paste for 10-15 minutes.
 At the time of serving, heat 2 tbsp oil in a non stick pan, spread it evenly.
Shallow fry paneer cubes on medium heat till the paste sticks to the paneer.
Place on a serving dish. Sprinkle chaat masala and remove from fire.
serve hot with toothpick inserted in each piece as a starter.

Vegetable Appam

Ingredients
3 cups Idli batter  OR 1 cup each wheat flour(atta), maida, rava( suji)
 1 Tomato (chopped)
1/4 cup green peas
1/4 cup each finely chopped Capsicum and carrot   OR use whatever vegetable you've
2-3 green chillies finely chopped
1 inch piece ginger finely chopped
Salt to taste
2 tbsp  coriander leaves finely chopped
 oil as needed
Method
If you're using atta, maida, rava, mix all well with salt add water to make batter of idli consistency
* Mix finely chopped tomatoes, green peas, capsicum, green chilly, ginger, salt and green coriander in the idli batter and mix well.
Heat an appam karai or poaching pan, put enough oil in each hole, then put batter to fill it, once brown on side, flip it to brown on the other side, drain well and serve hot either plain or with chutney of your choice    OR
if you don't have appakarai or poaching pan, no worry, just heat enough oil in a kadai, pour spoonful of batter, cook to brown on both sides, serve hot.

Fig & walnut cookies

Ingredients: 
1 and 3/4 cup all purpose flour(maida)
1 cup butter
5 tbsp dried figs(finely chopped)
1/4 cup brown sugar
6 tbsp honey
1/2 tsp vanilla essence
1 tsp mixed spices
1 tsp baking soda
2 tbsp dried dates(finely chopped)
2 eggs
175 g rolled oats
1/2 cup walnuts(finely chopped)
Pinch of salt

Method:
Take a bowl, add butter and whisk. Add dried figs, brown sugar and honey and mix.
In a bowl, add vanilla essence, mixed spices, pinch of salt, baking soda and chopped dates and mix.
In a bowl, break the eggs and beat well.
Add the mixture of (vanilla essence, mixed spice and dates) and mix. Add the butter and dried figs mixture and mix well.
Add walnuts and mix well. Add flour and rolled oats and mix.
Grease a baking tray with oil. Put a tablespoon of batter onto the greased tray keeping enough distance between each spoonful.
Bake in a preheated oven at 180-degree centigrade for 25 minutes.
Cool and serve

Oats chaat

Ingredients
For The Meeta/ sweet Chutney (makes Approx. 2 1/2 Cups)
1 cup deseeded dates (khajur)
1/2 tbsp deseeded tamarind (imli)
1 tbsp lemon juice
1/2 tsp chilli powder
1 tsp cumin seeds (jeera) powder
1/2 tsp black salt (sanchal)
salt to taste

Other Ingredients
1 cup quick cooking rolled oats
1/4 cup finely chopped tomatoes
1 cup beaten low-fat curds (dahi)
1 tbsp meetha chutney , recipe above
1/4 cup cooked kala chana (brown chick peas)
2 tsp chilli powder
2 tsp cumin seeds (jeera) powder
2 tsp black salt (sanchal)
2 tsp chaat masala

For  Garnishing
1/2 cup finely chopped coriander leaves
3 tbsp fresh pomegranate (anar)

Method
For  meeta chutney
  1. Wash the dates and tamarind and put them in a pressure cooker on a high flame for 2 whistles.
  2. Allow the steam to escape and keep aside to cool.
  3. Blend in a mixer to a smooth paste using 2 tbsp water.
  4. Strain the mixture through a sieve.
  5. Add lemon juice, chilli powder, cumin seed powder, black salt and mix well. Keep aside.
How to proceed
  1. Dry roast the oats in a non-stick pan on a medium flame for 3 to 4 minutes. Keep aside to cool.
  2. Combine all the ingredients, including the oats, in a large bowl and mix well.
  3. Serve immediately garnished with coriander and pomegranate.
tip:
  1. The meetha chutney can stay fresh for 2 months when stored in the deep-freezer.

Oats Lollipop

Ingredients
1 tsp ghee/ clarified butter
1/2 cup grated jaggery (gur)/ brown sugar
1/4 cup roasted quick cooking rolled oats
1/4 cup lightly roasted and finely chopped mixed nuts
(pistachios, almond and walnuts, you can use roasted peanuts also)
 1 tbsp roasted sesame seeds (til)

Method
  1. Heat ½ tsp of ghee in a broad non–stick pan, add the jaggery and cook on a slow flame till the jaggery melts, while stirring continuously.
  2. Remove from flame, add all the remaining ingredients and mix well. Keep aside to cool slightly.
  3. Grease your hands with the remaining ½ tsp of ghee and divide the mixture into 12 equal portions, shape it into a round ball and insert a small stick in the centre.
  4. Cool completely and store in a air-tight container.
Health tips- oats contain fibre, reduces cholesterol, high in fibre, jaggery rich in iron, nuts rich in protein, walnuts rich in omega 3 fatty acids, sesame seeds rich in calcium.
