Ingredients and Prep
Atta 1 cup 150 gm
Besan 1 cup 120 gm
Salt to taste
Ajwain ½ tsp crush with hands and add
Kalonji ½ tsp
Add 4-5 tbsp ghee, mix well till it holds with your hand
Than add water little by little to knead to a stiff dough, cover and rest for 15 minutes
For curry
Heat 2 tbsp mustard oil in a pressure cooker
Add jeera ½ tsp, hing little
Make a paste with 2 green chilies, ½ " ginger and 2 tomatoes, add the paste
Add turmeric pdr ¼ tsp, coriander pdr ½ tsp, Kashmir red chili pdr ½ tsp
Fry till the oil separates, then add
Potatoes 4 big peeled and chopped mix well for 2 minutes
Add 2 cups water or less, add ¼ tsp garam masala, salt, mix well
Cover the cooker , let 1 whistle come, then lower flame, let it cook for another 4 minutes, remove and keep aside till pressure releases.
Fry in hot oil 5-6 green chilies slit till crisp, remove, fry 1-2 tbsp of whole coriander seeds till brown and crisp, off the flame, remove the coriander and serve with fried green chilies, sprinkle some salt over them.
Open the cooker, mash the potatoes little add coriander leaves, remove in a bowl to serve.
Knead the dough, take a portion, knead well, roll out to a little thick roti without adding atta
.cook on hot tawa by smearing some ghee and pressing the roti on both sides till crisp cook on medium heat only, pressing and turning often to cook till brown.
