Ingredients:
- 1 cup low-fat cottage cheese
- 2 large eggs
- 1/4 cup olive oil
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup diced fresh strawberries
Preparations
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mix together the cottage cheese, eggs, olive oil, honey, and vanilla extract until smooth.
In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the diced strawberries.
Spoon the batter into the muffin cups, filling each about 2/3 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool slightly before serving.
