Chocolate Chip Cottage Cheese Muffins

Ingredients

  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1/3 cup coconut sugar or sweetener of choice
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Preparations:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the cottage cheese, eggs, melted coconut oil, coconut sugar, and vanilla extract until smooth.
  3. In a separate bowl, combine the whole wheat flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the dark chocolate chips.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool on a wire rack before serving.
