Pumpkin Spice Cottage Cheese Muffins

Ingredients

  • 1 cup low-fat cottage cheese
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon pdr
  • 1/4 tsp nutmeg pdr
  • 1/4 tsp ginger pdr
  • 1/4 tsp salt

Preparations

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the cottage cheese, pumpkin puree, eggs, coconut oil, maple syrup, and vanilla extract.
  3. In a separate bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ground ginger, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Spoon the batter into the muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool on a wire rack before serving.
