Blueberry and Chocolate Cottage Cheese Muffins

 Ingredients

  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup olive oil
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup fresh or frozen blueberries
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the cottage cheese, eggs, olive oil, honey, and vanilla extract until smooth.
  3. In a separate bowl, combine the whole wheat flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently fold in the blueberries and dark chocolate chips.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.
