Ingredients
- 1 cup low-fat cottage cheese
- 2 large eggs
- 1/4 cup olive oil
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup fresh or frozen blueberries
- 1/2 cup dark chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the cottage cheese, eggs, olive oil, honey, and vanilla extract until smooth.
- In a separate bowl, combine the whole wheat flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the blueberries and dark chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
