Add the corn to a blending jar and blitz
quickly to get lightly crushed corn. Transfer it into a mixing bowl,
add the chopped spinach and onions along with garlic, now add some salt
along with besan and rice flour. Season with red chili powder and
turmeric powder. Use very little water to get a thick pakora batter.
Heat your appam pan and add a few drops
of oil to each section. Spread the oil across the section. Now using a
spoon scoop out small quantities of the pakora batter and place them in
each section of the appam pan.
Cook on all sides until they are golden brown and crispy.
Remove from the appam pan and sprinkle some chat masala over them.
Serve with mint coriander chutney with hot tea.
