Add the soaked urad dal and moong dal
with green chilies and ginger to a blending jar, do not add any water
blend them very well to get a smooth airy and light batter.
Transfer the batter to a mixing bowl,
add salt and add a pinch of baking soda. Give it a quick whisk.
Heat an idli steamer with water in the
base. Grease the idli moulds with a little oil. Pour small quantities of
the prepared better, place the idli stands into the steamer and steam
for 10-12 minutes or until the bhallas are steamed and fluffy.
Remove from the idli stand and let it
cool for a few minutes. Give it a quick dip in water to get that perfect
Bhalla consistency.
Place 3-4 bhallas on a serving plate.
Pour a generous quantity of curd over it. Top it with sweet tamarind
chutney and mint coriander chutney.
Sprinkle chat masala and roasted cumin powder.
Garnish with pomegranate seeds and sev bhujia .
