This chickpeas salad sandwich makes for an
extremely healthy, filling, and hearty lunch. Chickpeas are a
nutritional powerhouse and full of protein, calcium, iron, magnesium,
and potassium. This recipe uses generous amounts of chickpeas along with
turmeric and parsley. This healthy sandwich hardly requires any time to
prepare and tastes so amazing. Add your favorite veggies on top to make
it more exciting!
Ingredients
Garbanzo beans - 1 lb. (cooked) roughly 500 gm
Mayonnaise - 1/4 cup
Garlic - 1 large clove (minced)
Ground turmeric - 1 tsp.
Parsley - 2 tbsp. (chopped)
Salt and Pepper - to taste
Whole grain bread - 6 slices (or any other bread of your choice)
Preparations
Rinse the cooked beans and drain well. Add
the beans to a bowl and mash them.
Ideally, mashing around 75% of them
would give a nice texture to the salad.
Next, add the remaining ingredients and mix well.
Then, spread the beans
salad on a slice of bread.
You can use avocado or cucumber slices as topping.
Drizzle with a little
bit of olive oil, if desired.
