Spinach and Feta Omelette

 

Ingredients:

Method:

  1. Wash and chop the spinach. Crumble the feta cheese and set aside.
  2. Crack the eggs into a bowl and whisk them together until well combined. Season with a pinch of salt and pepper, and add garlic powder or red pepper flakes.
  3. Heat the olive oil or butter in a non-stick pan over medium heat. Add the spinach and cook for 1-2 minutes, until wilted.
  4. Once the spinach is ready, pour the beaten eggs into the pan, swirling it gently to ensure the eggs evenly cover the bottom of the pan.
  5. As the eggs start to set (after about 1-2 minutes), sprinkle the crumbled feta cheese evenly over one-half of the omelette.
  6. Once the eggs are fully set (but still a little moist on top), carefully fold the omelette in half to cover the filling. Let it cook for another minute or two until golden brown and the cheese is melted.
  7. Slide the omelette onto a plate. You can garnish it with extra feta or a few fresh herbs like parsley or dill. This omelette is great on its own, or you can pair it with whole-grain toast or a fresh salad for a well-rounded meal.
