Ingredients:
- 2 large eggs
- 1/4 cup fresh spinach (chopped)
- 2 tbsp feta cheese (crumbled)
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- Garlic powder or red pepper flakes for extra flavour
- Parsley or dill
- Whole grain toast
Method:
- Wash and chop the spinach. Crumble the feta cheese and set aside.
- Crack the eggs into a bowl and whisk them together until well combined. Season with a pinch of salt and pepper, and add garlic powder or red pepper flakes.
- Heat the olive oil or butter in a non-stick pan over medium heat. Add the spinach and cook for 1-2 minutes, until wilted.
- Once the spinach is ready, pour the beaten eggs into the pan, swirling it gently to ensure the eggs evenly cover the bottom of the pan.
- As the eggs start to set (after about 1-2 minutes), sprinkle the crumbled feta cheese evenly over one-half of the omelette.
- Once the eggs are fully set (but still a little moist on top), carefully fold the omelette in half to cover the filling. Let it cook for another minute or two until golden brown and the cheese is melted.
- Slide the omelette onto a plate.
You can garnish it with extra feta or a few fresh herbs like parsley or
dill. This omelette is great on its own, or you can pair it with
whole-grain toast or a fresh salad for a well-rounded meal.
