Ingredients:
- 2 tbsp graham cracker crumbs
- 1 tbsp butter (melted)
- 4 oz cream cheese (softened)
- 2 tbsp sugar
- 1/4 tsp vanilla extract
- 1 egg yolk
- 1-2 tbsp sour cream
- Fruits
- Whipped cream
- Chocolate sauce
Method:
- Prepare the crust: In a small bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of your mug to form the crust layer.
- Make the cheesecake filling: In another bowl, beat the softened cream cheese, sugar, vanilla extract and egg yolk together until smooth. You can use a fork or small whisk for this, mix in the sour cream for a creamier, tangier filling.
- Assemble: Pour the cheesecake filling over the crust in the mug. Make sure the filling is spread evenly.
- Microwave: Microwave the mug on high for 40-60 seconds. Start with 40 seconds and check to see if the cheesecake has been set (it should be firm but slightly jiggly). If needed, microwave for another 10-20 seconds, but be careful not to overcook it.
- Cool and Enjoy:
Let the cheesecake cool for a few minutes before serving. If you like,
top it with fruit, whipped cream, or a drizzle of chocolate sauce.
