Ingredients:
- 4 flour tortillas (large size)
- 2 cups shredded cheddar cheese
- 2 tbsp butter
- 3 garlic cloves (minced)
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- Fresh parsley
- Optional fillings, grilled chicken, vegetables or sour cream
Method:
- Prepare the garlic butter: In a small pan, melt 1 tablespoon of butter over medium heat. Add minced garlic and cook for about 1-2 minutes until fragrant. Remove from heat and stir in the garlic powder, oregano, salt, and pepper.
- Assemble the quesadilla: Heat a large skillet or griddle over medium heat. Brush one side of each tortilla with the garlic butter mixture.
- Cook the quesadilla: Place one tortilla, buttered side down, in the heated skillet. Sprinkle a generous amount of shredded cheese over the tortilla. Place a second tortilla on top, buttered side up. Cook for about 2-3 minutes on one side, or until the bottom tortilla is golden and crispy. Flip it over and cook the other side for another 2-3 minutes.
- Serve: Once the
cheese is melted and the tortillas are golden brown and crispy, remove
the quesadilla from the pan. Cut it into wedges and serve hot. Garnish
with freshly chopped parsley for an extra pop of colour and flavour. You
can also add other fillings like grilled chicken, vegetables, or even a
little bit of sour cream on the side for extra flavour.
