Ingredients:
- 1 ripe avocado (you can use Pesto, cream cheese or Ricotta or cottage cheese as cheaper alternative)
- 2 slices of your favourite bread (sourdough or whole grain works well)
- Fresh mozzarella cheese
- 1-2 tomatoes, sliced
- Fresh basil leaves
- Balsamic vinegar
- Olive oil
- Salt and pepper to taste
- Eggs
Method:
- Toast the bread: Start by toasting your slices of bread until they are golden and crispy.
- Prepare the avocado: While the bread is toasting, mash the avocado in a bowl with a fork. You can season it with a pinch of salt and pepper, and a drizzle of olive oil if you like. Once the bread is toasted, spread a generous amount of mashed avocado on each slice.
- Add the mozzarella: Tear pieces of fresh mozzarella and layer them over the avocado. Top with tomatoes and basil: Add the tomato slices on top and garnish with fresh basil leaves.
- Drizzle with balsamic vinegar: Finally, drizzle balsamic vinegar over the top for that sweet, tangy finish and serve. You could even add a poached or fried egg on top for extra protein if you like.
- Pesto: It can be a fantastic creamy spread. It pairs wonderfully with tomatoes and basil, giving a similar flavour profile to Caprese without the avocado.
- Cream Cheese or Ricotta: Both cream cheese and ricotta are affordable and creamy. They’ll give your toast a rich texture, though you might want to season them with a bit of salt, pepper, or lemon to mimic the flavor complexity of avocado.
- Cottage Cheese: A lighter, protein-packed alternative. Spread it over the toast and add some seasonings like salt, pepper, or herbs to balance the flavour.
