Egg-less Rose Gulkhand Cake

Sorry for the bad photo, I  had made this cake for daughter's anniversary in a hurry, as I wanted to surprise her before she returned visiting some people here. The moment she returned, she came searching for the cake, as the smell was strong ! I was very happy that she loved the cake a lot, as you can see !

INGREDIENTS
curd 2 tbsp
milk  1/2 cup approximately
cane/ brown sugar  8-10 tbsp or as per taste
baking pdr. 1 tsp
baking soda 1/2 tsp
melted ghee 1 1/2 tbsp
all spice 1/4 tsp
cinnamon pdr.  1/4 tsp
rose petals dried 1 -2 tbsp
nuts chopped 3 tbsp
all purpose flour 2 cups approximately
rum and raisins essence 1/2 tsp
salt little
gulkhand   2 tbsp

METHOD

in a bowl, I added curd, milk, cane sugar, mixed well, added baking soda and baking pdr., mixed well, added ghee, then added flour little by little, mixing well after each addition. I didn't use electric beater or whisk, just used a ladle to mix it all.
Once the flour got well mixed, added gulkhand, spice powders, essence,salt and nuts, mixed well.
When I found the batter was a bit thick to bake in normal microwave, added little milk to get the correct consistency and micro high for 8 minutes, then let it rest for 2 minutes, turned it over on a plate, ready to cut and eat.

It was very porous, soft. Honestly, I never measure my ingredients, just add them as I feel like, God helps me to get the correct consistency, for which I'm really grateful to God for everything.

Left-over rice-onion pakora

Pakoras ready to eat

INGREDIENTS

left-over rice 2 cups ( is what I had)
onion  2 big finely chopped
green chilies finely chopped 5-6 or as per taste
salt to taste
ajwain  1/2 tsp
hing little 
besan  about 1 cup or little more as needed
oil for frying

METHOD
add rice, finely chopped onion, chilies, salt well, then add hing, ajwain, besan as needed. I didn't add any water, as I felt, when I added salt to onion and mixed with rice, it gave out water, then added, hing, ajwain and besan as needed to bind it all together.
Heat oil, once hot, either make small balls or drop little pakoras in hot oil, turn over and fry till dark brown and crisp. 
This can be eaten plain or if one desires with chutney/ ketchup.
