Sweet- spicy mango pickle ( mango chunda)


Ingredients
raw mango/ partly ripe mango peel and wither cut into small pieces/ grate ( I cut into pieces as I find it difficult to grate, as my wrist gets swollen)
for 1 bowl of cut mango I added about 1 1/2 tsp of salt
turmeric pdr. 1/2 tsp
chilli pdr.  3/4 tsp
mixed it all well, kept it covered inside the kitchen stirring daily for 3 days till it gave out little water
then I added almost equal quantity of sugar, mixed well, kept it inside the kitchen, or you can keep the vessel covered with a cloth and keep it in the sun daily, keep it in once the sun goes down
repeat this process till the sugar syrup forms 2 strings   OR
like what I did, after 2 days inside, I microwaved it for about 14 minutes, or cook till the syrup gets thick.
this if properly handled will last a year, if not gulped down plain by family members !
some people do mix in some saunf, raisins and nuts chopped
this goes well with toasted bread, roti, idli, dosai or eat it plain !
