Ingredients
1/8 tsp saffron strands
3/4 cup sugar
2 tbsp unsalted butter
1 tsp sea salt
1 tsp baking soda
3/4 cup pistachios
water as needed
Preparations
Line a rimmed baking tray with a silicon mat or use butter paper
Crush the saffron threads in a small mortar with a pestle and soak the saffron in a bowl with water.
Bring sugar, water and salt to a boil in a medium saucepan and medium heat. Add the saffron mix. Stir occasionally until the sugar is dissolved.
Continue cooking without stirring until the mixture turns golden. Add the baking soda and mix until the mixture is smooth and creamy.
Remove from the pan and stir in the pistachios and pour the mixture onto the silicon mat, spreading it out as thin as possible with a buttered spatula. Sprinkle the pistachios over the brittle and let it cool
Break into bite-sized pieces and enjoy!
You may lightly crush the pistachios and sprinkle too.
