Malvani Cashew Usal

  

 Ingredients

cashew nuts 1/2 cup

onion 3 chopped

fresh grated coconut 1 cup

poppy seeds 1 tsp

garlic cloves 6-7

tomato 1 chopped 

ginger chopped 1 tsp

turmeric pdr 1/2 tsp 

red chili pdr 1/2 tsp or to taste

oil 2 tbsp

Malvani masala 1 tbsp 

bay leaves 2 

black peppercorns 4-5

salt to taste 

dry red chilies 3-4 

 

Preparations

Soak half a cup of cashew nuts in water and boil them for 15 minutes

In a pan, heat 1 tablespoon of oil. Add chopped onions and chopped garlic, and saute them until golden brown and remove to a plate.

Roast the coconut and then add ginger, red chilies and poppy seeds.  Saute for 2 minutes.

Switch off the flame and keep the above mixture for cooling. When cooled, grind the mixture into a smooth paste.

In the same pan, add oil, and once the oil is hot, add bay leaf and peppercorns. Add the coconut onion mixture and saute for 2-3 minutes.

Add the soaked cashew nuts and malvani masala, and let it boil for 5 minutes. Turn off the flame and garnish with coriander and serve with rice, pav, roti.
