Cut Brinjal into thin and long slices of 2 to 3 inches each piece.
Fry them to a golden brown.
Take the fried Brinjal pieces off the
oil and add the dry chili and some turmeric powder to the same oil.
Keep the flame low. Let it cook for 1 min.
Add 3/4th glass of water.
Increase the flame and bring it to a boil.
Once it starts boiling lower the flame and add the mustard paste.
Mix it well and let it cook for 4 to 5 mins on low flame.
Add the fried brinjal pieces.
Cover and cook for 5 more mins on medium to low flame.
Add 1 teaspoon mustard oil on top and 2 green chilies split
Switch off the flame. Serve with hot steamed rice.
