This Fried Jackfruit Balls recipe is the perfect way to indulge your sweet tooth while also enjoying the unique flavour and texture of jackfruit. Made with a blend of jaggery, coconut gratings, and idli batter, these sweet balls are crispy on the outside and soft and chewy on the inside, making them an irresistible treat that’s perfect for sharing with family and friends.
Ingredients:
Jackfruit (ripe and de-seeded): 3 cups
Coconut scrapping: 1 cup
Jaggery: 1 cup
Cardamom powder: 1 tsp
Ghee: ½ cup + to fry
Idli batter: 2 cups
Salt: ¼ tsp
oil for deep frying
Method:
Steam jackfruit for about 10 minutes. Cool, peel the skin off and grind it coarsely.
Heat a pan and add the ground pulp of the jackfruit, coconut scrapping, jaggery, ½ cup ghee.
Cook on a medium flame for about 10 minutes while continuously stirring.
The whole thing will come together as a single mass, add cardamom pdr, mix well and remove.
Cool and divide it into small balls.
In a bowl mix together idli batter and salt. Add enough water to thickly coat the jackfruit balls.
Take a jackfruit ball, dip it into the batter and gently fry it in hot ghee till golden brown.
Serve hot.
Jackfruits are called super-foods because of the number of antioxidants that it contains. Most people think eating jackfruit is a big taboo for diabetics. It is wrong, as fruits contain fructose, that doesn't spike your sugar levels, as long as you eat anything in a small quantity. Jackfruit are also rich in fiber,another reason why it won't spike your sugar levels. Not sure, how many of you know that jackfruit flour is available in the market and also in Amazon. I've used the flour along with whole wheat flour when I used to make roti/ parathas. I also used it to make kanji/ porridge with oats, ragi, jackfruit flour with jaggery, as jaggery is rich in iron, good for health, better than white sugar.
