Making aioli is easy, and is arguably the greatest cold sauce of all time. It's nothing more than olive oil emulsified into freshly crushed garlic, seasoned simply with salt and lemon. This is pure, fiery, intense garlic flavor like you may have never tasted.
Ingredients:
Potatoes 200 gm
Chili flakes 2 gm
Garlic, peeled 10 gm
Coriander leaves 1 tbsp chopped
black pepper 2 gm
Salt 5 gm
Lemon Juice 1 gm
Maida 50 gm
Corn flour 40 gm
Garlic aioli 55 gm - see above what it is.
Capsico sauce, 2 ml (optional)
Sunflower oil 150 ml
Method:
Peel and slice the potatoes into thin skins.
Mix maida and corn flour, then coat the potato skins in this mixture.
Heat sunflower oil in a pan and deep-fry the coated potato skins until golden and crispy.
In a separate pan, sauté garlic, black pepper, and chilly flakes.
Add the fried potato skins, toss with salt and lemon juice.
Garnish with chopped coriander leaves.
Serve with garlic aioli and a drizzle of capsico sauce for a spicy kick.
