It’s difficult to always get that nice, crispy jacket around the potatoes when you prepare them in the oven. But with these simple steps, you’ll be able to create the crispiest oven-roasted potatoes ever every single time!

Type of potato

First of all, you need to know what type of potato you can best use. For potatoes roasted in the oven, it’s best to use a type of potato that’s a little crumbly, like new potatoes Peel the potatoes and, depending on size, cut them in half and then cut those halves in half so you get pieces of equal sizes.

Boiling

Put a pot of water on the stove, wait for it to boil and add a bit of salt to it. Add the cut potatoes to the water and boil them for about 10 minutes. Boil the potatoes until just before they’re properly cooked – that’s the key here. They have to go in the oven later, so you don’t want them to be completely done already before that. Check this by sticking a fork in a piece of potato. If the outside is soft but the inside is still a little hard, they’re perfect and you should take them off the heat. The secret for crispy roasted potatoes is an action a lot of people skip when they’re preparing them. It takes place before the potatoes even go into the oven! During the previous step, you’ve drained the water from the pot but left the potato wedges in there. Now for the trick! Place the lid on the pot and shake the pot vigorously a few times. By shaking the potatoes like this you’ll make sure they bruise a little on the outside, which eventually creates that nice, crispy jacket!

It’s time for the last step. Preheat your oven to 190 °C. Line a baking tray with baking paper and sprinkle some olive oil over it. Divide the potatoes over the baking tray and make sure they’re all covered in oil by moving them around on the tray. Put the baking tray into the oven for around 30 minutes, all the while keeping an eye on the potatoes to make sure they don’t become a little too brown. And that’s it! You’ve got yourself the most delicious, crispy oven-roasted potatoes ever!
