Coffee Energy Bites

Snack on a few bite-sized coffee energy treats to give you a boost during the day. Peanut butter may be substituted for almond butter, but it must be the creamy variety. Here is the delicious recipe:

What You Will Need:

  • 1 cup dry whole grain oatmeal
  • 1/2 cup ground flaxseed
  • 2 tbsp fresh ground un-brewed coffee beans
  • 1/2 cup creamy almond butter
  • 1/4 cup of honey
  • 1 tsp vanilla
  • 1/4 cup chocolate chips
  • 1/4 cup dried cranberries
Directions:
  1. Stir the oatmeal, flaxseed, and coffee granules together in a medium bowl until thoroughly mixed.
  2. Add the almond butter, honey and vanilla.
  3. Fold in the chocolate chips and cranberries once everything is combined, and stir well.
  4. Allow the mixture to chill in the fridge for 20 minutes.
  5. Roll them into tiny balls after they've finished chilling.
  6. Store in an airtight container in the fridge for no more than 1 week
