Zucchini and Oatmeal Kebabs

 

 Ingredients

 For the kebabs

  • 2 cups Zucchini, grated Squeeze out excess moisture
  • 1 cup Oats, rolled For the best outcome
  • ¼ cup Nutritional Yeast Adds cheesy flavor
  • 1 tsp Salt To taste
  • ½ tsp Pepper To taste
 
Instructions
 
Preheat the oven to 400°F (200°C).

Grate the zucchini and squeeze out excess moisture.
Combine grated zucchini, oats, nutritional yeast, and herbs/spices in a mixing bowl.
Season the mixture with salt and pepper.
Shape the mixture into kebabs and place on a baking sheet lined with parchment paper.
Bake the kebabs for 20-25 minutes, flipping halfway through.
Cool the kebabs slightly before serving with mint chutney/ hummus or any dip of your choice/ ketchup.
 
TIP= you may add some finely chopped green chilies or chili-ginger-garlic paste if you want it spicy.
You may add some fine suji/ semolina if you want some crispiness, you can lightly roll in fine suji before baking.
