HOW TO MAKE EASY WITHOUT LUMP MODAK / KOLAKATTAI'S OUTER COVERING AND KAJU MODAK

INGREDIENTS for covering
rice 1 cup soaked in 1 cup water
water 1 cup
salt wee bit
oil 1 tsp

METHOD
soak rice in 1 cup water for 3 hours, drain well, then grind using the same water to a smooth batter
boil 1 cup water, adding salt and oil, once water boils, add the batter on low flame stirring continuously. It will be easier if you use a non-stick pan/ kadai. Stir till it will form a ball together and when you touch with your finger , if the dough doesn't stick, that means it is cooked, cool, remove, cool and mix well with your hand to a soft dough. To make modak, apply oil in your hand, take a small ball, roll well, then flatten, then holding the centre with your thumb and pointing finger, make the edges thin, as you keep turning it around to get a even cup shape. Put the filling of your choice, cover, either together like a cone shaping well, or crescent, fold the edges like we do for gujia.

FOR FILLING
the traditional filling with coconut
for 1 coconut grated
gur/ jaggery roughly the size 1 medium orange
water wee bit
mix alCl together in a kadai, keep stirring till it becomes thick and dry, then only when you stuff it will be easier and also in case you want to make it the previous day of the Chathurthi, it will last well, even if you can't make use all the fillings the same day, as we normally make different types of modaks, vadai, kheer, idlis and so on.

For til filling
roast 1 cup til well, cool
gur/ jaggery about  2-3 tbsp
power both together well, this you can make in larger quantity and keep, as it won't get spoiled and can be even eaten plain, as it is good for health, as til is rich in calcium, gur is rich in iron.

KAJU FILLING
kaju/cashew nut 1/4 cup micro high for 2 minutes or keep it out in the Sun for some hours for the moisture to dry from kaju

sugar 2-3 tbsp
cardamom 2-3
powder all together to a fine paste or you can powder kaju with cardamom, and  add powdered sugar and mix well

FOR SPICY FILLING
normally vada batter is steamed in idli plate-like 1-2 idlis  for about 10 minutes, cooled and crumbled well
for tadka 3 tsp oil
mustard seeds 1 tsp
urad dal 2 tsp
chana dal 2 tsp
green chili finely chopped 1 tsp or use chili pdr. to taste
curry leaves finely chopped 1 tsp
hing 1/4 tsp
heat oil 3 tsp, add mustard seeds, once it crackles, add the dals, fry till golden, add green chili, hing, curry leaves, then add the crumbled vada mixture which was steamed, mix well, cool, stuff in modak


WHAT TO DO WITH LEFT-OVER DOUGH OR FILLING?
Normally my mother used to make more dough, as she and all of us loved what some call as amni kolakattai ! it is nothing except that you add salt and chili powder to taste along with little hing to the dough, mix well, then roll into small balls, steam those balls for 7 minutes, then cool. Heat 2 tbsp oil, add mustard seeds, once it crackles, add little hing, add the steamed balls, roast well, adding wee bit chili pdr. if desired, this is surely a big hit, as normally there are too many sweets in festive days, so this one just disappears in few minutes !

Sabudana-dates-carrot kheer

Ingredients

sabudana 1/4 cup wash and soak overnight
dates 3 tbsp de-seeded and chopped
carrot grated 1/4 cup
milk 500-600 ml
sugar 1/2 cup or to taste
walnuts chopped 2 tbsp ( optional)

Method
cook sabudana, carrot and dates in milk, stirring from time to time on low flame once the milk comes to a boil. Once sabudana is well cooked, it becomes transparent then add sugar to taste, boil till sugar melts stirring from time to time, let it boil for another 2-3 minutes, remove, serve hot/ cold garnishing with chopped nuts.

Sabudana / Sago pancake

INGREDIENTS

sabudana soaked and drained 1 cup
potato boiled mashed 2
green chutney 1/2 cup
salt to taste
paneer crumbled 1/2-3/4 cup
green chili-ginger paste 2 tsp
oil to cook

For chutney
coriander leaves 1 cup
green chilies 3-4 as per taste
roasted chana dal ( pottukadalai) 3 tbsp
salt to taste
fresh grated coconut  2tbsp
lime juice 2 tsp
for tadka
oil 1 tsp
mustard seeds 1 tsp
urad dal 2 tsp
curry leaves 8-10 chopped
hing 1/4 tsp

For pancake
mash well sabudana and potato well, add salt, green chili-ginger paste, mix well
heat a tawa, add oil, spread well, take a big ball of sabudana mixture, pat well with your hands, as thin as possible, spread on tawa, patting little, put oil, cook on low flame, cover with a lid, till the bottom is nice brown, turn it over gently, spread some oil on top and turn it over gently, cook again till the bottom is also getting brown, at this stage, spread chutney on top, sprinkle some paneer, cover and cook for 2 minutes on low flame, serve hot, with more chutney if desired.
 for chutney, grind the ingredients to a fine paste adding salt to taste. for tadka, heat oil, add mustard seeds, once it crackles, add urad dal, as it turns brown, switch off the gas, add hing, curry leaves, pour over chutney, mix well.

HOW TO REMOVE LABELS FROM JARS EASILY

I'm sure that all of us had problem removing those sticky labels from the jars, here is an easy way to solve this perennial problem, with baking soda and vegetable oil ! simple and common ingredients found in almost all kitchen, right?

Mix equal parts of these together and form a runny paste. 

Remove the label. Running the jar under hot water makes peeling the label off easier. 


When the jar is dry, apply a thick layer of the paste over the gluey area. 


Let it sit on the jar for at least 10 minutes. Then, using a paper towel, wipe the paste off the jar. All traces of adhesive material should wipe away too. 


Wash the jar again using soap to remove any remaining oil residue. 

 
 This method also works well for wine bottles and cosmetics containers too.

EASY WAY TO MAKE GRAVY

AS WE'RE ALWAYS IN A HURRY, ESPECIALLY THE WORKING LADIES, HERE IS AN EASY WAY TO MAKE GRAVY, YOU CAN DO IN BULK AND STORE IN THE FREEZER TOO.

GRIND TOGETHER

ONION 2-3 CHOPPED
GREEN CHILIES 5-6
GINGER 2" CHOPPED
TURMERIC POWDER 1/2 TSP
CORIANDER POWDER 2 TSP
JEERA POWDER 1 TSP
GARAM MASALA POWDER 1 TSP
TOMATOES 3 CHOPPED
GARLIC 1 TSP ( OPTIONAL)
SALT TO TASTE
RED CHILI POWDER 1 TSP

ONCE YOU'VE GROUND THE PASTE, HEAT 2 TBSP OF OIL, ADD 1 TSP JEERA, ONCE IT CRACKLES, ADD THE PASTE, FRY WELL TILL THE OIL FLOATS ON TOP. THIS GRAVY CAN BE USED FOR MOST OF THE NORTH-INDIAN DISHES, USE HOW MUCH EVER YOU WANT, IN CASE YOU WISH TO STORE, MAKE MORE, STORE IN ICE-CUBE TRAY, FREEZE, THEN PUT IT IN ZIPLOCK BAG, AS IT IS EASY TO STORE, REMOVE AS MANY CUBES AS YOU NEED AT A TIME. 

PS- IN CASE YOU WANT A RICH GRAVY, ADD MILK POWDER, MIX WITH LITTLE WATER AND ADD TO THE GRAVY.

Freeze fruits first on a cookie sheet so they won’t clump, and then move them into Ziploc bags. If you want to freeze bananas, but don’t want them to turn mushy when you defrost them, freeze them with the skin on. Freeze cheese by the block, and then let it thaw completely so it won’t crumble. If you prefer shredded cheese, put it in a Ziploc bag and add a little cornstarch (to prevent clumping).

HEALTHY VEGETABLE CUTLETS

 Rolled and ready to be coated with oats
 ready to be fried after coated with oats
 getting shallow fried
ready to eat with spicy ketchup

INGREDIENTS
onion 1 small finely chopped
carrot 2 small finely chopped
cauliflower,potato vege left-over 1 cup
besan  2 tbsp
oats 2 tbsp
salt to taste
green chilies finely chopped 3-4 as per taste
oil for shallow frying
hing little

METHOD
add the chopped veges along with left-over veges, green chilies, salt, mix well, mashing the veges, add besan and oats mixing well
make small balls, roll in oats, flatten and press well for the oats to be coated, shallow fry in hot oil on medium flame till brown on both sides, serve hot with ketchup or chutney.

ps- this is one good way of using any left-over veges that you've. You can combine with onion, chilies, carrot or boiled potato, season to taste, can use oats powdered or even avil/ chiwda powdered to coat and to bind to give the crispiness, instead of using maida. You may even use besan and rice flour to bind.

HEALTHY BEETROOT- CUTLET

INGREDIENTS
beetroot grated 1 cup
raw banana boiled and mashed 1/2 cup
potato boiled and mashed 1/4 cup
green chili paste 1 tsp or to taste
ginger paste 1 tsp
garlic paste 1 tsp ( optional)
salt to taste
hing 1/4 tsp
oil to fry
oats powdered to coat
fresh coriander leaves chopped 2 tbsp

METHOD
in a pan, heat 2 tsp of ghee, fry the grated beetroot till soft, remove, cool, add rest of the ingredients, except oats and oil, mix well. shape as desired, shallow fry in a pan in medium flame till brown on both sides.serve hot with chutney/ ketchup.

MILK PEDAS

INGREDIENTS

CONDENSED MILK  200 ML
MILK POWDER 1CUPGHEE 2-3 TBSP
CARDAMOM PDR. 1 TSP
NUTS TO DECORATE 

METHOD
IN A HEAVY PAN, MELT GHEE, THEN ADD MILK POWDER AND CONDENSED MILK, MIX WELL, COOK ON MEDIUM FLAME STIRRING CONTINUOUSLY, TILL THE MIXTURE GETS THICK, ADD CARDAMOM POWDER, MIX WELL, REMOVE AND COOL. THEN GREASE YOUR PALMS WITH LITTLE GHEE, SHAPE PEDAS INTO ROUND SHAPE, MAKE A LITTLE DEPRESSION IN THE MIDDLE TO PUT PIECES OF NUTS. THE PEDAS ARE READY TO EAT !

PS- IN CASE YOU WANT FLAVOURED PEDA- ONE CAN ADD SAFFRON SOAKED MILK TO GET KESAR PEDAS, RIGHT WHEN IT IS BEING COOKED, YOU MAY ADD IT. OR

TO GET CHOCOLATE PEDA, YOU MAY ADD 2 TBSP OF COCOA POWDER ALONG WITH MILK POWDER, MIX WELL AND COOK AND PROCEED IN THE SAME WAY.

EGG-LESS BROWNIES

INGREDIENTS
condensed milk  100 ml
butter 35 gm or 3 1/2 tbsp
powdered sugar 3 tbsp
maida / all purpose flour  50 gm
baking pdr.  1/2 tsp
cocoa pdr. 20 gm, roughly 2 1/2 tbsp
vanilla essence 1 tsp
chocolate chips 2-3 tbsp
milk as needed

METHOD
in a bowl, mix condensed milk, butter and sugar well, add the dry ingredients, mix well, you may do with an electric hand beater. Add roughly 1/4 cup of milk, beat well, add essence and half of the chocolate chips, beat well. pour into a well greased and dusted baking pan, bake in a pre-heated oven at 165 deg. C for roughly 25 minutes  by sprinkling remaining chocolate chips on top (or till a knife inserted in the middle comes out clean.)

MOONG DAL HALWA / PUDDING

INGREDIENTS

moong dal soaked for an hour 1 cup and ground to a fine paste
milk 250 ml
condensed milk 1 cup
cardamom pdr. 1 tsp
raisins 2 tbsp
cashew nuts 2 tbsp chopped
ghee 2-3 tbsp

METHOD
in a heavy pan or non-stick pan, first roast nuts and raisins, drain and keep aside
in the same pan, add the ground dal paste, cook stirring on medium flame for 3-4 minutes, add milk, mix well, cook on low flame till it thickens and dal is well cooked, add condensed milk, keep stirring till it gets thick, add a 1-2 tsp of ghee, cardamom powder and half of the roasted nuts and raisins, mix well. remove, serve hot or cold, garnishing with remaining nuts and raisins.

NO COOK, EASY COCONUT LADDOOS OR BALLS

INGREDIENTS

desiccated coconut   1 cup
milk powder 1 cup
powdered sugar  3/4 cup
melted warm ghee 3-4 tbsp
cardamom powder 1/2 tsp
dates/ dried  figs finely chopped 2 tbsp
cashew nut halves/ almond slices 1 tbsp

METHOD
in a bowl mix coconut, milk powder, sugar, cardamom powder well. add first about 2 tbsp of warm ghee, mix well, see if you can roll into laddoos, if not add more ghee, so that you can shape your laddoos. To make your laddoos fancy, stuff some pieces of dates or figs in it, then decorate with a nut. It will be ready in 10 minutes.
