Hot chilli baked potato

Ingredients

breadcrumbs  1/2 cup
green chillies finely chopped to taste
cheddar cheese grated  1 cup   OR vegetable oil  1 tbsp
boiled, peeled and mashed potatoes  500 gm
egg 1 ( those who don't eat egg, may substitute with 1 tbsp cornflour mixed in 1/2 cup water)

Preheat oven to 180 deg. C
those who use egg, beat it with 1/2 cup water, stir in breadcrumbs, salt, chillies, cheese/ oil
add potatoes, shape into small balls, place in lightly greased pan, bake for 12 minutes
take carefully out of hot oven and stir in hot sauce to coat well and serve hot.

Hot chilli sauce
green chillies  6-8 seeded
green olives  1 cup stuffed
vegetable oil   1 cup
salt 1/2 tsp or to taste
 combine all ingredients, bring to a boil, serve as a dip.

Creamed Spinach

Ingredients:

    2 tsp  olive oil
    1/4 cup minced red onion

    3 cups fresh spinach washed and finely chopped
    1 tbsp butter
    1 tbsp whole wheat flour
    1/2 cup low-fat milk
    1/8 tsp ground nutmeg
    1/8 tsp salt
    1/8 tsp freshly ground pepper
    2 tbsp grated Parmesan cheese

Heat oil in a large nonstick pan over medium-high heat. Add  onion cook, stirring, until fragrant. Add spinach and cook, stirring, until just wilted, about 2 minutes.

Heat butter in a small saucepan over medium-high heat. Add flour and cook, stirring, until smooth and bubbling, about 30 seconds. Add milk, nutmeg, salt and pepper; cook, whisking constantly, until thickened, about 1 minute. Stir the spinach into the sauce. Sprinkle with grated cheese and serve.



ps- spinach is rich in iron, calcium, adding milk and cheese, calcium level is increased
cooking with whole wheat flour makes it healthy than using all purpose flour

Healthy Banana Cookies

Ingredients

bananas ripe 3 well mashed
oats rolled  2 cups
dates de-seeded and chopped  1 cup
oil  1/3 cup
vanilla essence  1 tsp

Method

pre-heat oven to 350 deg. F OR 175 deg. C
in a large bowl, mash bananas well, then add rest of the ingredients, mix well, set aside for 15 minutes
drop teaspoonful onto an ungreased cooking sheet
bake for 15-20 minutes until lightly brown
cool well and store in air-tight containers, if anything is leftover !
