Heart Surgery

Hi All


this is to inform you all that hubby had an heart attack on 7th, then angiography. It was decided that he has to undergo open heart surgery tomorrow, as there is a block in one of the previous stent that he has & below it. So, I'm sorry, that I can't put any new posts till he recovers, though, I've plenty of wonderful recipes to share with you all.


Please pray for the operation to be successful & for his speedy recovery .

Pineapple Cake


Ingredients
  • 1 can crushed pineapple with juice
  • 2 cups white sugar
  • eggs
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts
Instructions
  1. Mix all ingredients together well. Pour into a greased and floured pan. Bake 350 degrees F for 40-45 minutes.
     
  2. To make icing, mix 1/2 cup butter and 8 oz package of cream cheese, 1 1/3 cup icing sugar and 1 teaspoon vanilla. Mix and frost cake while warm.

Mango Upside Down Cake


Ingredients
  • 2 cups sliced ripe mangos
  • 2 tablespoons lemon juice
  • 1 tablespoon butter
  • 1/3 cup brown sugar
  • 1/4 cup butter
  • 3/4 cup sugar
  • egg
  • 1/2 cup milk
  • 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Method
  1. Preheat oven to 375 degrees F.
     
  2. Pour lemon juice over mangos and let stand 15 minutes.
     
  3. Melt 1 tablespoon of butter in 8-inch cake pan or casserole. (Do not use iron skillet as mangos will darken.)
     
  4. Add brown sugar and cover with mango slices.
     
  5. To prepare cake batter, cream butter; add sugar and cream; add beaten egg.
     
  6. Sift dry ingredients and add alternately with milk. Pour over mangoes and bake 50 to 60 minutes. When cake is done, turn upside down and serve while warm.

Easy Coconut Cream Pie


Ingredients
  • 1/2 cups coconut
  • 1/2 cups sugar
  • 1/2 cup milk
  • eggs
  • 1 teaspoon Vanilla
  • 9-inch pie crust
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Put coconut In a bowl and add milk to it, let set until coconut soaks up the milk.
     
  3. Beat sugar and eggs together, then add vanilla.
     
  4. Add coconut to the egg mixture.
     
  5. Pour mixture into pre-made crust.
     
  6. Bake at 350 degrees F for 30 minutes.
