Crockpot Rice Pudding-Low Calorie


Ingredients

  • 1/2 gallon milk 
  • 1 C. regular rice 
  • 1 Cup. Splenda
  • 3 eggs
  • 1 Tbsp. Vanilla
  • 1 can evaporated milk
  • Pam cooking spray

Method


Spray crock-pot with Pam, ( my crock pot is the one with a heating bottom/non -stick aluminum pot) . Pour milk and rice into pot, cover and cook on high for 2 hours (if using the crock-pot like do, it will cook up much sooner than 2 hours on high). Cook until soft and stir often. Mix sugar, eggs and evaporated milk & vanilla with whisk. Pour into crock-pot. Cook 45 minutes or so, once again stirring occasionally. I add raisins and cinnamon just before it is finished cooking. This makes enough for 4 good servings

Papaya halwa


Papaya halwa


Green papaya 1                                sugar 3 cups
Water 2 cups                                    ghee 4 tbsp
Cardamom pdr ½ tsp                       nuts 1 tbsp


Method
1)      Peel the papaya, remove the seeds & greater finely &  put it in a bowl of water for 20 minutes.
2)      Then squeeze out all the water from the papaya & keep aside.
3)      Put sugar & water in a pan & heat over slow flame.
4)      When syrup starts boiling, add papaya & keep stirring till the mixture thickens.
5)      Then add ghee, when ghee is completely absorbed in the mixture, remove.
6)      Add cardamom pdr.
7)      Spread on a greased plate & flatten.
8)      Press nuts on tops, allow to cool & cut into desired shapes.

Mango coconut barfi

fresh coconut grated 1 cup                          mango juice 1 cup          whole milk pdr 1/2 cup                               sugar 2 cups                                             cardamom pdr 1/4 tsp
ghee 1 tbsp                                                  sugar pdr 1/4 cup

1) Smear a heavy pan with a tbsp of ghee.
2) Put the mango juice & cook till it thickens.
3) Remove from fire. Add milk pdr., grated coconut & sugar.
4) Mix well & keep aside for 15 minutes.
5) Put it back on fire & cook till the mixture begins to leave the sides of the pan.
6) Add cardamoms, remove & keeps tirring for 2 more minutes.
7) Add sugar pdr & mix well.
8) Spread on a greased plate & cut.

Tomato- coriander rice in coconut milk

grind together- tomatoes 3          ginger 1"                   garlic 4-5         fresh coriander leaves 1 cup
green chilies 4-5 or as per taste

onion 1                   coconut milk 1 cup            rice 1 cup          salt to taste         ghee 2 tbsp
cumin 1 tsp        cardamom 2         cloves 2         cinnamon stick 1"         bay leaf 1

1) Wash rice well, drain, marinate it with the ground masala for 30 minutes
2) In a heavy pan, add ghee, cumin, cloves, cardamom, cinnamon & bay leaf, once the aroma comes, add finely chopped onion, saute well.
3) Add marinated rice, fry well, this process can be done in a pressure cooker too.
4) Add coconut milk & 1 cup water, mix well, add salt to taste.
5) Pressure cook for 2-3 whistles, depending on the rice you use.

ps- to make it a complete meal, have it with cucumber, potato raita.

2-Minute Fudge


Ingredients

  • 1 lb. powdered sugar
  • 1/2 Cups. cocoa
  • 1/4 tsp. salt
  • 1/4 Cup. milk
  • 1 Tbs. vanilla extract
  • 1/2 Cup. butter
  • 1 Cup nuts chopped

Method


In a 1 1/2 quart casserole, stir sugar, cocoa, salt, milk and vanilla together until partially blended (it will be too stiff to blend thoroughly). Put butter over top in center of dish. Microwave at high for 2 minutes or until smooth. If all butter has not melted in cooking, it will as mixture is stirred. Blend in nuts. Pour into a lightly buttered 8 x 4 x 3 inch dish. Chill 1 hour in refrigerator or 20 to 30 minutes in freezer. Cut into squares. Makes about 36 squares.

Holiday Cherry Bars


Ingredients

  • 3/4 Cup melted butter
  • 1 1/2 Cup graham cracker crumbs
  • 1 1/2 Cups. white chocolate chips
  • 1 1/3 Cups. coconut flakes
  • 1 Cup. crushed walnuts (optional)
  • 1 14-oz. can sweetened condensed milk
  • 1 10-oz. jar chopped red cherries with the juice

Method


Preheat oven to 350 degrees. Prepare 9x13-inch pan with non-stick spray. Place graham cracker crumbs in pan, add melted butter, mix and press into the bottom of pan. Pour chopped cherries and juice over crust, layer the white chocolate chips, coconut, nuts. Pour the sweetened condensed milk over the top. Bake for 25 minutes. DO NOT OVER BAKE.

Easiest German Apple Kuchen( cake)


Ingredients

  • 1 box yellow or white cake mix
  • 1 stick (1/2 C.) butter or margarine, melted
  • 1 can apple pie filling

method



Preheat oven to 350 degrees. Pour pie filling in greased and floured 9x13-inch pan. Sprinkle cake mix over filling. Pour melted butter over cake mix. Bake for 20-25 minutes, or until lightly browned.

Note:  Use another fruit pie filling in place of the apples, or use chocolate or spice cake mix in place of the yellow cake mix. Or jazz it up by sprinkling on some chocolate chips, cinnamon chips, or chopped nuts before baking.

No-Bake Oatmeal Cookies



Ingredients

  • 3 Cups oats
  • Pinch of salt
  • 1 tsp. vanilla
  • 2 Cups. sugar
  • 1/2 Cup milk
  • 1/2 Cup. butter or 1 stick
  • 3 big spoons cocoa
  • 2 Tbsp. peanut butter

Method


Cook sugar, milk, butter, cocoa and peanut butter for 3 minutes in saucepan at medium heat.  Take off stove and add vanilla and a pinch of salt.  Stir in oats.  Drop by spoonful onto greased pan or waxed paper.  Let cool.

Caramel Apple Salad


Ingredients

  • 4-6 snickers candy bars, frozen
  • 4-6 apples, chopped
  • one 8-oz. carton Cool Whip
  • one 3-oz. pkg. dry instant vanilla pudding

Method


Smash frozen candy bars in wrappers with hammer. Mix all ingredients together.

Apple Pudding


Ingredients

  • 6 tart apples, peeled, cored and sliced
  • 1/4 Cup all-purpose flour
  • 1 Cup. sugar 
  • 1 pinch salt
  • 2 Cups milk

Method


Preheat oven to 325 degrees. Toss apples with flour, sugar and salt and place in a 9x9 inch baking dish. Pour enough milk into dish to come almost to the top of the apples, but not cover them. Bake in preheated oven 45 minutes, until apples are tender.
Note: Substitute 1 C. Splenda for 1 C. granulated sugar

Speedy Sugar-Free Rice Pudding


Ingredients

  • 1 Cup evaporated skim milk
  • 1/4 Cup cooked white rice
  • 1/2 of a 1-oz. pkg. sugar-free vanilla pudding mix
  • 2 tbsp. golden raisins
  • nutmeg for sprinkling

Method


Combine all ingredients except nutmeg in a 1-quart glass measuring cup or microwave-safe bowl. Cover with a sheet miroom temperature for 5 minutes. Serve warm or chilled, sprinkled wit nutmeg.

Fruit Dessert Pizza



Ingredients

Fruit

1 tube sugar cookie dough
8 oz. cool whip thawed
  • 8 oz. cream cheese
  • 1/2 C. sugar
  • 1/2 tsp vanilla
  • 1-1/2 C. fruit such as strawberries.

Method


Spread cookie dough on cookie sheet and pat down to make a crust. Bake at 350 until brown. Cool Completely. Mix cool whip, cream cheese, sugar and vanilla until soft and creamy. Spread this on top of baked cooled cookie crust. Top with sliced fruit. Cut into squares and keep refrigerated.
